It’s elderflower madness in my kitchen today!!! If you saw my instastories this morning, then you know that I picked TONS of elderflower...and got a little too excited and carried away 😬😬😬
Anyways, now I have to come up with ways to use it all... I already am drying some, making a syrup, infusing water to make a probiotic tea + a facial toner and I’m trying this fermenting way out that’s in the pic. I found a recipe (all in Danish) that uses dates, honey and lemon to make a fizzy fermented drink in 2-3 days. Let’s see how this goes!!! I’ll update you when it is ready πŸ˜‰πŸ˜‰πŸ˜‰
Do you have any other ideas on how to use up all this elderflower?!? I’m thinking maybe an infused vodka or something... I don’t know AHHHHH HELP ME!!!! I’m being overtaken by elderflower πŸ™ƒπŸ™ƒ

I had some leftover homemade sunflower seed butter and wanted to use it up, so of course I made something that involved chocolate because #I❀️🍫 !
This fudge is super duper easy to make and you can easily swap out the sunbutter for your favorite nut butter. πŸ˜‰

I can’t stop staring at it! Does anyone else find this cauliflower enchanting? Haha!! It’s so beautiful and perfect and cute! I just want to hug it β˜ΊοΈπŸ˜πŸ€“πŸ˜¬πŸ˜‚

Saturday Snack Time πŸ’šπŸ’œ
The sun is shining today, so snacks on the balcony allllll day πŸ’›β˜€οΈπŸ˜Ž
Here I have some raw veggie crackers topped with smashed peas, quick pickled beets, fennel, toasted sunflower seeds and fresh thyme πŸ˜‹πŸ’š

Smoked salmon salad for lunch today πŸ₯—πŸŸ
I recently found these smoked salmon filets in the supermarket, and I am obsessed! They are made with just salmon, salt and pepper πŸ‘Œ... and well, smoke haha! Too good and the perfect addition for a quick lunch πŸ˜‹
This salad has
Mixed greens
Red cabbage
Sunflower sprouts
Fresh dill
Fresh basil
annnnnddd THE SALMON :)
I dressed it with a simple mustard vinaigrette. Yum yum πŸ˜‹

Candied Sunflower Seeds πŸ’•
I am testing a treat today that may or not involve chocolate...hehe πŸ˜‹πŸ« Of course it involves chocolate, it’s basically all I make haha!
Anywho, these sunflower seeds turned out INCREDIBLE! All you do is mix 1/2 cup of raw sunflower seeds with 2 tsp coconut or maple syrup and a pinch of salt.
Bake them at 350 Fahrenheit (or 170 Celsius) for 5 minutes. Give them a stir and cook for another 2-3 minutes, then let cool completely.
Crispy, crunchy and addicting candied sunflower seeds πŸ˜‹πŸ˜‹πŸ˜‹

Simple veggies after a week of piadinas and seafood galore in Italy
I have been so busy with non-food related work and travel and stuff that I have lost my food inspiration πŸ˜³πŸ€¦β€β™€οΈ But don’t you worry your little self, I am going to get back into it! I have a lot of hobby lobby food projects to start πŸ‘©β€πŸ”¬πŸ˜‚ Let’s see what happens in Heather’s Test Kitchen this week haha!
Now back to the food.... this is just some bone broth sautΓ©ed red cabbage, with broccoli rice and charred green onions. I dressed it with a mixed of almond butter + soy sauce. Viola! Easy peasy and so un-queasy (sorry it’s the only thing that rhythms πŸ˜‚)

You know that predicament where you think you are making a really, really big smoothie, but it turns out to be really, really small?
Yeah, that happened to me today, so I made up for the size by putting unnaturally large blueberries on top of it πŸ‘πŸ€£
Here’s what’s in my smoothie...
Big handful fresh spinach
1/4 frozen avocado
1/2 cup frozen cauliflower
1/4 cup frozen peas
1/3 frozen banana
1/2 cup water
1 scoop @furtherfood collagen peptides
1 tbsp hemp protein powder
Blended it up in my @vitamix Then topped it with some BIGGGGG blueberries, pumpkin seeds, goji berries and cacao nibs πŸ˜‹πŸ’šπŸ˜‹πŸ’šπŸ˜‹

Do you guys know of those packets of really strong but really sugary ginger tea where all you do is add hot water and the ginger tea mix dissolves into a sweet and fire-y cup of goodness? Yes those ones!! Well, I wanted to recreate that tea but make it better for you!! This tea powder is bursting with fresh ginger flavor and lightly sweetened with coconut sugar. It’s soothing and so versatile!!...I even added the powder to my chocolate recipe and it turned out SO GOOD!! Recipe for that will definitely be coming soon πŸ˜‰

I’m back after a crazy AMAZING week in Tokyo!!!
To be honest, I never wanted to come back from Tokyo! Haha!!! The food is INCREDIBLE! The city is so vibrant and the people are even more πŸ˜πŸ‡―πŸ‡΅β€οΈ!!
It was the best week, but now I am looking forward to getting back into a routine here in Sweden!... Also a bonus, we came home to summer here!!! β˜€οΈπŸ’›β˜€οΈπŸ’›β˜€οΈ
This is me waiting in line to get (and pretending to be a...) Takoyaki aka octopus balls!! πŸ™ They are made from a batter with, I think, green onions and small dried shrimp and some other things... hard to tell haha!Then, a big piece of octopus is dropped in the middle and they spin spin spin them until cooked! Topped off with a thick Takoyaki sauce, mayonnaise, seaweed and bonito flakes; they are SO GOOD!! πŸ˜‹πŸ˜‹
