Good evening. Tonight’s dinner is grilled spicy chicken wings with grilled corn, carrots and red onion with crunchy broccoli, organic celery and @bolthousefarms organic blue cheese dressing. It was a great big plate of grilled goodness. Hope you have a great night.

Good evening. Some good comfort food for dinner tonight and a plateful of veggie goodness. Broccoli rabe sautéed in garlic and @kouzinifoods olive oil, seasoned with salt and pepper, sautéed mushrooms, roasted parsley pearl onions and @eatbanza chickpea penne pasta with a drizzle of olive oil and crushed tomatoes. It’s was a delicious, simple home cooked meal. I hope you have a great night!

Tonight’s dinner is two organic eggs cooked in lots of olive oil with asparagus, tomatoes, feta and crunchy sour dough toast for dipping. It was amazing!

I hope you’re having a great Tuesday! Today’s lunch is a great big falafel salad with kale massaged with lemon juice and olive oil, cucumbers, tomatoes, pan seared artichoke hearts, olives, red onion and a drizzle of tahini. The falafel is from Trader Joe’s and all was so good. Have a wonderful day!

A plate of grilled goodness for dinner tonight. Grilled tuna steak seasoned with olive oil, garlic powder, LOTS of crushed black pepper and a little sea salt. I added a thick drizzle of a green Peruvian sauce made with fresh herbs, cumin and jalapeño which I got from a new local restaurant @sanguchonfactory that just opened up in my area. I also made some grilled 🌶 mini peppers, mushrooms and 🌽 corn sprayed with coconut oil and seasoned with sea salt to go along. And there is something about 🐟 tuna and 🥑 avocado that taste so darn good so I couldn’t forget that. It was a delicious nourishing meal. Hope you have a great night.

Hola! Starting off the new week with a bowl filled with quinoa, steamed broccoli, tomato and feta salad and a soft boiled egg. To make the tomato feta salad add olive oil, red wine vinegar, crumbled feta, red onion and chopped parsley to halved cherry tomatoes and season with salt and pepper. Toss to fully coat the tomatoes. Grilled Cilantro Lime Shrimp Tacos with Avocado & Corn, Black Beans and tomatoes. I served it with quinoa.

🍤 Peel and devein 1 lb. shrimp. In a medium bowl add 1/4 cup olive oil, juice of 1 lime, 1/2 tsp. garlic powder and 1/2 tsp. ground black pepper. Combine well. Add the shrimp and toss to coat. Let sit in refrigerator for at least 20 mins. Place the shrimp on skewers and grill, pan sear or roast a few minutes on each side until pink.

Fill toasted tortillas 🌮 of your choice and top with black beans, 🥑 avocado, 🌽 sweet corn, 🍅 tomatoes, a squeeze of lime, fresh chopped cilantro and a generous drizzle of 🌶🔥 hot sauce. Sooo good! I hope you have a great night!

Breakfast on the go today at my favorite local @panerabread and got to try out one of their egg sandwiches. I ordered the Avocado, Egg White and Spinach on a sprouted flat grain bagel but subbed the egg white for an over-easy runny egg because it’s all about the yolky goodness for me 🍳 It really hit the spot! When you think of all your favorite savory foods all at one time you can create the ultimate Buddha bowl! In this bowl here’s the breakdown:

🌿🥗 Greens as a base, I added butterhead lettuce to the bottom and sprouts in this bowl.

🧀🍳🍗 Add some protein, I added halloumi cheese, a hard boiled egg, sliced almonds and chicken to this bowl.
.
🥑🥑 Healthy Fats, I added half a creamy avocado and kalamata olives to this bowl. Sliced almonds would also be included here.
.
🍓🍊🍇 Fruits and berries, I added strawberries to this bowl.

Season it with fresh herbs, sea salt, olive oil, coconut oil and seeds. Lemon juice, vinegar and chili flakes are always a tasty addition. Way too much to list but these are just a few suggestions for some real whole ingredients. Most of the time I can only eat about half of one of these bowls and save the other half for a quick leftover meal. Not only was it delicious but is was healthy and nourishing. Have a great night!

Hello, I hope you’re having a great weekend! Saturday brunch in full swing. Celebrating the Royal Wedding with a toasted multi-grain “English” muffin (even though they don’t call them English muffins in the UK 🤔) topped with dairy free chive almond cream cheese and pastrami style smoked salmon. Arugula salad or as the British call it “rocket” with tomato, marinated onions, caper berries and half an avocado with a sprinkle of @traderjoes everything bagel seasoning. The recipe for the marinated onions is from @nocrumbsleft and the idea for the caper berries instead of my usual olive addition is from @cookingtriangle . It was a tasty brunch for sure!
