Ingredients (for 2):
- 3 packs Yutaka shirataki noodles
- 80g shiitake mushrooms
- 80g oyster mushrooms (shimeji, enoki, porcini etc.)
- 60g pancetta, diced
- 2 spring onions
- 2 cloves garlic
- 2 tbsp sake
- 2 tbsp Yutaka dark soy sauce
- black pepper
- olive oil
- Grated parmesan cheese (optional)
- nori seaweed, cut into thin strips (optional)
.
Method:
1. Rinse the shirataki noodles in clean water a few times and cut them up into more easily served lengths
.
2. Boil the shirataki for 3 minutes in a salted water in a saucepan, then drain well
.
3. Remove the stems of the mushrooms and slice finely. Cut the bacon into thin strips. Chop the garlic. Thinly slice the spring onion diagonally
.
4. Heat the oil in a frying pan and stir-fry the the pancetta. When the pancetta becomes crispy, add the mushrooms and garlic then stir-fry until cooked. Season with pepper
.
5. Put the shirataki into the pan and mix with the ingredients, then add the sake, soy sauce and stir-fry lightly to season
.
6. Garnish with spring onion, nori seaweed and parmesan cheese when serving
.
★TIPS★
Shirataki come packaged in liquid and are ready to be used straight away, but it's recommended to rinse them in clean water to remove the slightly “interesting” smell that accompanies the liquid!

Roast Beef and Yorkshire Pudding Sushi Roll🍖🤝🍣

Ingredients: Makes 18
- 75 g Plain Flour
- 1 free-range Egg
- 75 ml Milk
- 55 ml Water
- Butter
- Salt and Pepper
.
★Sushi Rice:
- 125 g Yutaka Sushi Rice
- 165 ml Water
- 2 tsp Japanese Rice Vinegar
- Wasabi Paste
- Fillet Steak, 3.5 cm thick - cooked to preference
.
Method:
1. Prepare batter by sifting flour into a bowl, make a well in the centre and add egg. Beat with electric hand-whisk, gradually adding water, milk and seasoning. Leave batter to stand for 30 mins and stir thoroughly again prior to using it
.
2. Pre-heat the oven to 220ºC, Gas Mark 7, 425ºF
.
3. Grease 18 sections of a 24 section fairy cake tin and place a small amount of butter in the base of each section. Put in oven for 1-2 minutes until butter is melted and hot. Pour equal amounts of batter into each tin section. Return tin to oven middle shelf and bake for approx 10 minutes until risen and golden brown. Cool
.
4. Cook sushi rice as per instructions on the pack. Place to side and don’t remove lid. After cooling rice for 30 minutes, mix in 2 tsp rice vinegar
.
5. Heat frying pan. Rub steak with a little oil, salt and pepper. When pan is hot, add seasoned steak and fry for approximately 2½ minutes on each side. Place on a plate and allow to cool. When cool, thinly slice steak into 18 slices
.
6. Make a small hole in each Yorkshire pudding, stuff with rice then rest a thinly sliced piece of beef on top. Finish with a dollop of wasabi paste
.

Chicken Teriyaki Bao🍗✨

Ingredients (serves 4):
- 8 gwa bao
- 4 chicken thighs
- 2 tbsp katakuriko potato starch, for coating
.
★Teriyaki Sauce:
- 3 tbsp Yutaka dark soy sauce
- 3 tbsp Yutaka sake
- 3 tbsp Yutaka mirin
- 1 tbsp brown sugar
.
★Fillings:
- Yutaka Pickled cucumber (or any other pickles from our pickles range!)
- Salad leaves
- 1 spring onion, thinly sliced
- Yutaka sesame seeds
.
Method:
1. Mix the teriyaki sauce ingredients together, stirring until the sugar is dissolved
.
2. Turn the heat to medium. Lightly coat the chicken pieces with the katakuriko potato starch. Add 1 tbsp vegetable oil to the frying pan and fry the chicken, skin side down, to brown them (about 2-3 minutes). Remove the chicken fat by tilting the frying pan to the side and soaking up with a paper towel
.
3. Turn the chicken over and add the teriyaki sauce, and stir to season and coat the chicken evenly. Simmer for 5-6 mins on medium-high heat until the sauce thickens
.
4. Heat a large steamer over a medium-high heat. Steam the buns for 8 mins
.
5. Slice the chicken teriyaki into the thin stripes .
6. Stuff the bao with the pickled cabbage, wild rocket and chicken teriyaki
.
7. Sprinkled with spring onions, and sesame seeds on top
