Gratitude. Gratitude for the fact that I don’t have abs (far from it), my thighs touch, and I’m not more than 5-feet tall. Gratitude that my body carries me throughout the day, keeping me mentally stimulated while I work, creative in the kitchen, empowered during yoga, and sound asleep in the middle of the night. Gratitude for a million other things my body does, too. And, while it continues to change and evolve every day, I couldn’t be happier. In case you need another pumpkin-flavored thing in your life, I’ve got you covered 🎃🍫 But in all seriousness, my husband said these are the best bites I’ve ever made...and that’s coming from someone who doesn’t like pumpkin pie.

These are simple, nutrient-dense, and moist (sorry). Make these for your family and they’ll be like 🙏🏻🙌🏻

1 cup of dates, pitted + 1/3 cup pumpkin purée + 1/4 cup slivered almonds + 1/4 cup raw pumpkin seeds + 1/4 cup shredded, unsweetened coconut + 1 tsp vanilla extract + 1 tsp pumpkin pie spice + 80 grams of dark chocolate + 1 tbsp coconut oil

Throw everything into your food processor, except the chocolate and coconut oil. Pulse until equally combined, but not completely smooth. Melt the chocolate and coconut oil together (on the stove or in the microwave). Roll the dough into balls, dip into the chocolate, then place on parchment paper. Freeze for 30 minutes, then store the balls in the fridge.

Over the last 7+ years, I’ve dealt with a slew of digestive issues. But, beyond the physical symptoms, certain foods would also make me feel anxious, stressed, tired, sad, etc. As I began changing the quality of my food, I noticed a positive shift in both my digestive system AND my mental wellbeing. Sayonara, chemically-laden protein bars 😑😳
Fast forward to today, and I make the conscious choice to consume *mostly* unprocessed, wholesome food. I count ingredients, not calories. I start my day with a probiotic, a diluted apple cider vinegar shot, and other supplements. And guess what? I feel like a brand new person. Foods don’t send me on a rollercoaster of emotions nor do they cause adverse physical symptoms. Plus, I rarely get sick.

To get to my point: there’s more than just a mere association between gut health, disease, and mental health. They’re extremely correlated. I mean, your gut wall houses 70% of the cells that make up your immune system. Happy gut, healthy life.

I just finished reading “The Psychobiotic Revolution” by Scott Anderson (@tlcbooktours), and I couldn’t wave my pom-poms any higher for the importance of maintaining a healthy mix of gut microbes. You can truly reshape your mood as well as your metabolism by incorporating plenty of leafy greens, fiber, and probiotic / prebiotic-rich foods.

I highly recommend this book—especially if you like to nerd out on these types of topics like I do. If you’re a newbie to all-things gut health, this book does have a hefty dose of science in it. Be prepared to be wowed...or be prepared use Google as a crutch. Regardless, you’ll likely reevaluate your food and lifestyle choices to better your gut. Haaaaappy Sunday, friends! I hope you’re having a wonderful weekend. Earlier this morning, I had tea with a new friend (@rooted.in.healing). Ever since I created this account back in April, I keep thanking the universe for the amazing people I’ve met on Instagram — people who share similar dreams and aspirations, life experiences, and passions. It’s a funny dichotomy, this platform. But, I’ll save those thoughts for another day ☺️

In the spirit of thanks (and #Thanksgiving, duh), I baked you some granola. If you catch it in time, you can witness a pretty epic blooper when I started filming. I’ve added the recipe below! Mind you, I made some tweaks from when I filmed it earlier. Note to self: don’t put dried fruit into the mixture UNTIL the granola has fully baked + cooled 😑 Anyway, the #recipe is now good to go. It’s gluten-free and vegan, but feel free to swap the nuts, seeds, and dried fruit to fit your liking!

- 1 1/2 cups g-free rolled (or quick-cooking) oats
- 1/3 cup slivered almonds (raw)
- 1/4 cup pumpkin seeds (raw)
- 1/4 cup dried fruit, chopped
- 1/4 cup coco oil, melted and cooled + 3 tbsp maple syrup
- Few dashes of cinnamon

Preheat your oven to 350F. Line a baking sheet with parchment paper. Mix all ingredients in a bowl, except the dried fruit. Evenly spread the mixture onto the parchment paper. Bake for 15 minutes, mix with a spatula, then bake for another 15. Once it cools, add your dried fruit to the mix. Store in a glass container on your kitchen counter.

Last night, my husband and I went out on a dinner date. I left my phone at home. I get tired of this thing (and technology in general). Being separated from it for a couple of hours was more freeing than I anticipated. Note to self: ignore phone more often. For once, I didn’t think about checking my phone or Instagramming our dinner. I was way more present. Obviously.

Our dinner was mediocre, but we ordered two amazing desserts 🙌🏻👅 — an apple tarte with vanilla ice cream, doused in a warm caramel sauce + a giant s’mores sandwich made with homemade graham crackers and enough chocolate to feed a small army. It was pure bliss and pure sugar overload.
.
I had a moment of a) “I wish I could Instagram this!” and b) “This is way too much sugar.” But, I only held onto those thoughts for all of 10 seconds. I hope this is a reminder to a) leave your phone at home (or at least put it on airplane mode) and b) don’t be afraid to treat yo’ self.

And just like that, it’s Friday. WOOT. My lunches have either been leftovers (like today) or a random assortment of food that requires minimal time / effort ✌🏻#whatsonmyplate: baked spaghetti squash with @ahavahfarm veggies in a creamy tomato sauce (thanks to @mezzetta and red pepper @oasishommus) + toasted pine nuts + avo with @manitobaharvest hemp hearts. Despite the fact that I ate my weight in pumpkin bars last night, I rolled out of bed and threw together hearty pancakes to get my day started.

I don’t let my previous day’s food choices dictate what I’m going to consume the following morning. I also don’t let those food choices dictate whether or not I’m going to move my body the next day. I’m entering a new phase in my relationship with food / my body that echos beyond the trendy notion of “eating intuitively.”

I no longer tell myself that I’m eating “mindfully” or eating “intuitively.” I’m literally just eating. I’m not justifying my food choices nor categorizing them as an “intuitive” choice. I’m eating for the sake of nourishment, deliciousness, and satiety, and then I’m moving onto more important things. Like emails 🙃

Not my prettiest slicing work, but that’s #reallife. I’m now eating these fudge-y pumpkin bars out of the pan (read: low-key drooling) because they’re that good. I find that the more I travel, the more accepting I become of my flaws, my insecurities, and the things I tend to criticize about myself. There’s something about being in an unfamiliar place that allows me to completely let go. To let go of rigidity. To let go of limitations and borders. To let go to self-doubt. Which, inevitably, I’ve felt tremendously over the course of the last few weeks.

As some of you know, I quit my full-time job a week and a half ago. I’m embarking on a new chapter in my life. One that I’ve anticipated for quite some time. I’m beginning to piece together my future career, working on various projects and freelance content here and there, but change is scary. It’s really scary.
.
.
But, being away from home the last few days (in a new-to-me city) was just what I needed. Do I have a strategic, all-encompassing plan for my career now? No. Not quite. But I do have a blueprint. I also know what I’m passionate about, and traveling with my other half, @arichardson105, has reminded me that I’m equipped with the tools and the education (and the f*ing drive) to get me where I’m going. Wherever that may be.

Whether you’re on a journey of self-discovery, or you’re completely complacent with your life, I highly encourage you to find a new place—a new city, a new park, a new yoga studio, etc.—the unfamiliar will inevitably change you. And while change is scary, change is also good. So incredibly good. After all, change is the only constant in life.

One more thing. Make sure you have supportive people with you along the way. Make sure your friendships and your relationships serve you. Make sure that your people believe in you (more than you believe in yourself). You’ll need them. Trust me. So, cheers to change. And cheers to Nashville.
