Keeping meals REAL simple lately. We have 9 days until we have to be out of our apartment so it’s major crunch time to get everything done😳 I pan seared a piece of wild salmon and paired it with roasted delicata squash, arugula, radish and a little bit of cilantro👌🏼 Today we are hoping to get our windows installed in the van, exciting but also really scary because we are doing it all ourselves. I finally got around to sharing how I make my pickled onions today! The super simple 4 ingredient recipe is up on my blog (link in bio). I love adding them to any savory dish for extra flavor. In today’s bowl I’ve got soft scrambled eggs, roasted sweet potatoes, avocado, pickled onions and green leaf lettuce dressed in avocado oil, lemon juice, salt and pepper. Happy Monday everyone!

How I feel about making it through another long weekend thanks to @weekdaywarriors 🤸🏼‍♂️✨Typically weekends are super busy for me. We’ve been having @eatbanza pasta with tomato basil sauce on repeat the last few days because it’s delicious and also super quick. With everything going on I haven’t had much time to cook, so easy meals like this one come in really handy. I paired it with a piece of organic grilled chicken and romaine lettuce👌🏼 It finally stopped raining and looks like the sun might come out today, which means we can get back to work on the van! I was craving something warm and on the sweeter side for breakfast this morning (normally I’m a savory girl). So I whipped up a bowl of chia seed collagen oatmeal✨ To make: cook oats as usual, then add 1 scoop of @greatlakesgelatin collagen, 1 tbsp chia seeds and 1/4 cup almond milk. Heat on low until liquid is absorbed. Stir in 1 tsp of ghee (optional but makes it super creamy and rich). Top with apples cooked in cinnamon and coconut oil, walnuts, almond butter and a drizzle of maple syrup.

Things I always travel with: avocados, soft boiled eggs, smoked salmon and LOTS of veggies! This meal is my go-to when I’m away from home and can’t cook. Just throw it all in a bowl with salt and pepper and you’re good to go👌🏼 Finishing up some work before heading back home. Nate and I have had a really productive little getaway here in the desert. During a Q&A I did on stories the other day I answered the question “Did you go to college?” To be honest I used to dread this question. It’s something that I frequently get asked, along with “you’re in school right?”. After working in the service industry for the past 9 years I can’t tell you how many times a customer has ask me one of these questions and then looked at me sideways when I said no. Not to mention all the times I’ve been talked down to or belittled because of assumptions people make based off of my career choices. The truth is, I struggled A LOT in school. I had such a hard time and really lacked motivation to do better. I always knew deep down that I wasn’t meant to learn in a traditional school environment, but for years I felt guilty about it. I thought that I would never be successful and society really made me feel like I failed. It turns out that none of that is true. We all measure success differently. For me success is being happy, free of debt, having a roof over my head and food on the table. All of which I’ve been more than capable of maintaining over the past 9 years. I was really inspired to share this because of all the beautiful messages I received from you guys after that Q&A. So many of us have similar stories and it makes me really happy to be able shine a light on a topic that can be so discouraging. Luckily for us there isn’t just one way to be successful, especially nowadays. There are endless opportunities for people who choose to take a less traditional path. Never be afraid or ashamed to follow what you know to be true in your heart. Block out the noise and pave your OWN way❤️

This is what I call a clean out the pantry/freezer meal. I’m doing my best to use up all the food we have before we move. I made a big batch of chia pudding, roasted up some sweet potatoes coated in cinnamon and coconut oil and warmed up a bag of frozen raspberries in a sauce pan with lemon zest. Other toppings include slivered almonds, cacao nibs, @spreadthelove almond butter and @coyo_organic coconut yogurt. Happy Saturday!

Friday #whole30approved lunch inspo✨ I’m actually kinda jealous of all of you guys who are doing @whole30 this month. I was watching videos from October when I did whole30 and noticed how clear my skin was and how much energy I seemed to have. If you’re having a hard time and wondering “why am I doing this” just know that you are almost to the part where it gets good! In my bowl I have lightly sautéed garlic and lemon kale, roasted fingerling potatoes, pan seared wild salmon, avocado and micro greens👌🏼

It’s been WAY too long since I made a proper brunch plate. For the first time in a while I didn’t have to rush out of bed to get working on something🙌🏼 Going to enjoy a nice quiet morning with a stack of warm blueberry @simplemills pancakes. Happy Thursday everyone!

I just had to share last nights sunset show with you guys💕🌊 Huntington Beach has my heart🤗. It always has and probably always will. The day I moved here from LA I knew this was home, I could just feel it. A lot of people have asked where we’ll be leaving to once the van is done. As cool as it would be to say that we’re going to hit the road and travel for extended periods of time, that’s just not where we’re at right now. We aren’t quite ready to leave our jobs or this beautiful place we call home. That certainly doesn’t mean we won’t be going on lots of adventures! The only difference is now we won’t have to pay for hotels🙏🏼💃🏼
