Creamy Mushroom Skillet
(makes 2-3 servings)

300g brown button mushrooms
100g cashews presoaked for 4-6h in water
200ml veggie stock
250ml almond milk
2 onions
2 cloves garlic
1 tsp thyme
hand full fresh parsley
150ml water
1 tbsp vegan butter
Instructions:

Clean mushrooms, chop onion into small pieces, mince garlic.

Heat up skillet on high heat, add vegan butter and wait until melted. Add onions, garlic, thyme and mushrooms and fry until mushrooms are golden brown.
Then pour in the wet ingredients and lower heat. Cook on simmer for 15-17 minutes. Meanwhile drain cashews from their soaking water and add them together with 150ml water to the highspeed blender.
Blend on high speed until smooth and creamy.
Turn up the heat from the mushrooms to medium high and add the cashew cream. Stir through with a spoon from time to time and cook for another 2-3 minutes. Season with salt and pepper,
Chop up parsley and throw it into the creamy sauce.
Serve with rice, pasta or potatoes.

I call it the Berry Dream Cake because while eating it I picture myself swimming in a river of raspberry juice in a land where ice cream grows on trees 🦄 okay, okay.. I’ll share the recipe 😛😘 Save this now : Ingredients :

60g buckwheat flour
100g oat flour
100g almonds
100g coconut sugar
1 tbsp baking powder
1 banana (100g)
100g vegan butter
zest of one organic lemon
100ml almond milk
80g vegan yoghurt, unsweetened
80g raspberries + more to garnish
100g blueberries + more to garnish

*for the cream:

50g cashews, soaked in water for 4h and drained
3 tbsp vegan yoghurt
3 tbsp maple syrup
juice of half a lemon
*

Preheat oven to 200C.Blend oats and almonds in a food processor until fine flour consistency.
Then add the flour mixture to a big bowl and add in buckwheat flour and baking powder.
Now add banana, butter, lemon zest and sugar to the food processor and blend until creamy.
Pour the butter cream into the dry ingredients and add almond milk. Mix all well together until you have a smooth batter.
Carefully fold in raspberries and blueberries.
Add batter to the greased and parchment paper lines, 20cm baking pan and bake for 35-40 min.
Once ready, let cool down completely.
For the cream topping simply blend all ingredients together in a high speed blender until smooth.
Top cake with cream and more berries.

Flourless Chocolate Chip Blondies (makes 8 pieces)
80g almond butter
60g coconut sugar or brown sugar
1 flax egg (1 tbsp flax seed meal + 3 tbsp water) 3 tbsp aqua faba (chickpea brine)
½ tsp baking soda
80g dark chocolate chips (optional pinch of salt) *

Add ingredients for the flax egg to a small bowl and let sit until gel consistancy (about 3-5min). In a big bowl stir together all other ingredients except the aqua faba. Add the 3 Tbsp aqua faba to a medium size bowl and whisk until foamy (by hand whisking takes 4- 5 min). Now add the flax egg to the almond-butter mixture, stir until well combined and then fold in the foamy aquafaba.
Line a loaf pan (20cm) with parchment paper and add the batter to the tin, using a spoon or spartula. Spread evenly and bake for 15-20 min until top is golden. Let cool down completely (that step is important) before slicing and eating. The blondies will firm up the cooler they get. *

Bae of Banana Bread
*
3 ripe bananas (330g) + 1 for the top
180g buckwheat flour
100g coconut sugar or brown sugar
1 heaped Tbsp nut or seed butter (almond-,cashew,-sunflower butter or tahini)
1 tbsp baking powder
1 tsp baking soda + 1 tbsp cinnamon
60g raisins
200ml plant milk (I used almond milk)
80ml coconut oil, melted

for the glaze:

2-3 tbsp maple syrup or honey if not vegan
2-3 tbsp brown sugar or coconut sugar

Instructions *
Preheat oven to 200C and put non-sticking parchment paper into a loaf tin.In a big bowl mix together all dry ingredients.
Melt coconut oil and add oil, 3 bananas, nut butter and milk to a food processor and blend until smooth.
Pour wet mixture into the dry mixture and use a spartula or spoon to mix everything well together.
Now fold in raisins and add the dough to the loaf tin. Spread evenly with the back of a spoon.
Then devide left over banana lenghwise and press both parts slightly with your fingers into the batter.
Bake for 25 minutes, then take out of the oven, and spread glaze on top of the bread with a brush or spoon.
Sprinkle sugare on top and bake for another 15 minutes or until toothpick inserts clean.
Let cool down at least 30 minutes before taking out of the baking dish.
*note: make sure the bread has firmed up and is not soft in the middle when taking out. If so, bake for another 10 minutes.

For the sauce I used 100g cashews soaked in water for 4h, drained and rinsed, 100ml water, 1 red bell pepper, 3 Tbsp nutritional yeast, paprika, salt, chili powder and garlic powder. Blending up all ingredients in the high speed blended until creamy and smooth. Topped it off with coconut yoghurt and vegan parm. wishing you all a lovely Wednesday ❤️ *
