2 large avocados, peeled, pitted and halved
⅓ raw honey (or pure maple syrup, agave nectar)
½ cup raw cacao powder or unsweetened cocoa powder
1 cup of unsweetened coconut milk (almond milk or any milk preference); divide into two half cups
4 tsp of Vital Proteins Beef Gelatin
¼ tsp sea salt
Optional for garnish: whipped coconut cream, cacao powder, fresh berries
Add avocados, honey and ½ cup of coconut milk to a blender or food processor. Process until completely smooth. In a medium saucepan, pour the remaining ½ cup of coconut milk and bring to a low simmer. Sprinkle the Beef Gelatin into the coconut milk, add cacao powder and salt into saucepan. Whisk until the gelatin is dissolved and the mix is a dark chocolate color.
Portion the mix between two bowls (or 4 for smaller servings) set inside a tray or cookie sheet. Move the tray to the refrigerator and chill for 1 hour, or until the pudding is set. Top with whipped coconut cream, cacao powder and fresh berries as desired. Keep chilled until serving.
