Happy first day of summer! We've been pretending it's summer for weeks now, but it's officially here! 😎 We thought it was only fitting we come to you with one of our favorite breakfasts for those hot summer mornings, our Berry Breakfast Popsicles. Made with our Mixed Berry Collagen Peptides, they give you a boost of collagen protein to get you through the morning!
Berry Breakfast Popsicles
Ingredients:
1 c non-dairy yogurt
1 c coconut milk
⅓ c blueberries
⅓ c raspberries
2 scoops Mixed Berry CP
⅓ c granola
Popsicle Mold

Directions:
Combine yogurt, coconut milk and two scoops of Mixed Berry Collagen Peptides in large bowl and mix until combined. Gently fold in fresh blueberries and raspberries. Carefully pour into popsicle molds until 3/4 full. Add granola on top and store in the freezer according to popsicle mold directions. Freeze overnight and enjoy in the morning!

Looking for a sweet summer treat that’s actually good for you? We’ve got you. This Chocolate Pudding is full of the goodness of avocado plus the hair, skin, nail, bone, joint and gut benefits from Beef Gelatin. You’ll definitely want seconds of this one! 🥑Avocado Chocolate Pudding 🥑
Ingredients:
2 large avocados, peeled, pitted and halved
⅓ raw honey (or pure maple syrup, agave nectar)
½ cup raw cacao powder or unsweetened cocoa powder
1 cup of unsweetened coconut milk (almond milk or any milk preference); divide into two half cups
4 tsp of Vital Proteins Beef Gelatin
¼ tsp sea salt
Optional for garnish: whipped coconut cream, cacao powder, fresh berries

Instructions:
Add avocados, honey and ½ cup of coconut milk to a blender or food processor. Process until completely smooth. In a medium saucepan, pour the remaining ½ cup of coconut milk and bring to a low simmer. Sprinkle the Beef Gelatin into the coconut milk, add cacao powder and salt into saucepan. Whisk until the gelatin is dissolved and the mix is a dark chocolate color.

Portion the mix between two bowls (or 4 for smaller servings) set inside a tray or cookie sheet. Move the tray to the refrigerator and chill for 1 hour, or until the pudding is set. Top with whipped coconut cream, cacao powder and fresh berries as desired. Keep chilled until serving.

Firing up the grill for Father’s Day? Why not add dessert to the menu? We love grilling fruit in the summer for a healthy treat. Topping it with our Coconut Creamer Whipped Cream takes it to a whole new level 🔥

For the grilled pineapple:
8 pineapple slices, 1/2" thick
1 tsp olive oil

For the whipped cream:

1 14 oz. can unsweetened full-fat coconut milk
2 scoops Vital Proteins' Collagen Creamer, Coconut
Optional: 1 tsp. pure vanilla extract

For garnish: fresh mint (optional)

Instructions
Refrigerate can of coconut milk, 8 hours or overnight.
Place mixing bowl in refrigerator or freezer for 1 hour before making coconut cream.
Open can of coconut cream (do not shake or mix the can prior). Scoop solid layer of coconut cream into chilled mixing bowl. Reserve remaining coconut water for another use.
Using a hand or electric mixer, beat coconut cream on medium to high speed. Beat until fluffy and light.
Add 2 scoops of Vital Proteins' Coconut Collagen Creamer, beat 1 more minute. Taste and add vanilla if desired.

Heat the grill or grill pan. Brush pineapple slices with olive oil. Grill each pineapple slice 3-5 minutes on each side until nicely charred and lightly colored. Serve with a dollop of whipped cream. Garnish with fresh mint.

Ingredients:
1.5 c frozen cut melon
1 tbsp honey
¼ c coconut water
2 scoops Melon Mint Beauty Collagen
Directions:
Add all ingredients to blender and blend on high until smooth. Pour into loaf pan (or similar sized container) and freeze for at least 8 hours. When ready to serve, scoop and enjoy!

Ingredients-
2 c cut watermelon, frozen
2 tsp lime juice
2 c coconut water
Handful of ice (optional)
1 Stick Packs (or one scoop) of Collagen Peptides
Directions:
Add all ingredients to blender and blend on high until smooth! Depending on the consistency you are looking for, you can add ice to make your slushie even thicker.
