Today marks Korean Kimchi Day. As if we needed an excuse to celebrate this tasty ferment. There are hundreds of different types of kimchi but our recipe features cabbage, carrot, fresh ginger, gochugaru (Korean red pepper), garlic, onion, pink mineral salt & absolutely no starter cultures.

Wake up and taste the apples. Gaga's apple cider vinegar will rehydrate, detoxify, balance pH & aid digestion. Our favourite thirst-quencher on these hot days, simply add a dash to your water.

No powders or pills here. Basket of organic greens from our friends at Cafresco Organics in south east Melbourne. Incl. fennel, kale, endive, broccoli, asparagus and mixed herbs. Don't forget to eat your greens this week.

It takes time to ferment and develop all the bio-available nutrients in our PowerKraut. We don't rush this ancient process, allowing a good month or more for the magic to happen.

Daily bread making at Milia Eco-Retreat, Crete. Got a quick class from one of their resident chefs Panos. They produce 26 loaves of traditional sourdough daily, served at the restaurant right upstairs.
