Buffalo Cauliflower (revised version)
---------------------------------------------------
1- Cut up and prepare cauliflower approx. 1.5 head of cauliflower
2- In a bowl add 360ml (1.5 cups flour), onion and garlic powder to taste, 1 egg, and about 480ml (2 cups) chicken stock and mix well
3- Place the cauliflower in with the flour mix and make sure you coat them all
4- Pre heat a pan with vegetable oil and start frying
5- Mix about 120ml (0.5 cup) of melted butter and 300ml (1.25 cup) Hot sauce (I use Franks hot sauce)
6- Turn on the broil and use that to cook it for another 1.5-2 mins.
NOTES: Add more or less hot sauce based on your taste. Served with ranch, lettuce and carrots.

Vegetable Enchiladas
---------------------------------------------------
1- Pre heat oven to 175C (350F)
2 - Cut up and prepare all your vegetables (however much you like of each). I used tomatoes, mushrooms, corn, green/red bell pepper, onions, black beans
3- Sauté the veggies with some cumin, salt and pepper to taste
4- Add some chunky salsa sauce and stir in
5- Wrap these up in tortillas, place in oven safe dish, add the enchilada sauce and cheese
6- Bake in the oven for about 5mins covered and 3 mins uncovered.
NOTES: Easy to customize to your taste. Feel free to add your favorite protein (eg chicken, prawns, etc) but make sure you cook it first before adding it to the enchiladas.

Simple Slow Cooker Roast
---------------------------------------------------
1 - Season your roast with lots of salt and pepper
2- Slice onion thinly as whole pieces
3- In the slow cooker add a little beef broth, the onions to lay the roast on, the roast. Rest of the broth (approx 840ml (3.5 cups)), about 240ml (1 cup) dry red wine, celery pieces, onion chunks, rosemary and thyme then cook on low for about 4 hours
4- After about 4 hours add some carrots, potatoes and mushrooms and cook for another 3-4 hours

NOTES: Super easy to customize. You can also get some of the left over broth and mix a dash of flour to it while on simmer in a saucepan to make some gravy, which I should have done!. Serves: 4-6

Gnocchi 3 ways
---------------------------------------------------
1- Pre-heat oven to 230C (450F)
2- Cut up and prepare vegetables. Feel free to use what you would like. (I used brussels, zucchini, yellow squash, cherry tomatoes, mushrooms, and broccoli). 3- Place veggies in a bowl with some olive oil (just enough for a light coat) salt and pepper to taste.
4- Bake for about 15-20 min
5- Cook gnocchi (Read packet for cook time and time it to be ready when the veggies are done)
6- Mix the cooked veggies with the ready gnocchi
7- Add your favorite sauce

NOTES: for the pesto, I dusted used store bought pesto and put enough to taste. For the mariners sauce, you can use your favorite pasta marinara sauce. For the garlic butter, I just melted some butter with some fresh pressed garlic. ---------------------------------------------------

1 - Cut up and prepare all your vegetables (however much you like of each). I used mixed green leaves, mushrooms, corn, cherry tomatoes, red onion and avocado
2- Sauté the mushrooms
3- Cook the prawns and season with pepper and cajun (optional)
4- Mix about 2 tablespoons of pesto, 2 tablespoons of grainy mustard and 2-3 tablespoons of extra virgin olive oil.
5- In a bowl add the green leaves, red onion, corn, cherry tomatoes, mushrooms, some goat cheese, the prawns, avocado, dressing and some sliced almonds.
NOTES: Easy to customize to your taste. You can also substitute chicken for the prawns.

1 - Cut up all your vegetables (about 960mll (4 cups)). I used broccoli, zucchini, squash, celery and spring onions.
2- In a bowl mix 240ml (1 cup) flour, pepper, onion powder, and cajun (optional) to taste, 1 egg, and about 360ml (1.5 cup) chicken stock. Mix it up.
3- Pre heat pan with oil (I used vegetable oil)
4 - Cook till golden or until fish is fully cooked.
5 - Cook veggies at the same time, maybe a little earlier (these take about 5-8 mins to cook)

NOTES: Feel free to have fun and add other seasoning to the batter mix or different vegetables. I would have also added bok choy but didn’t have any. For the batter mix, you want it a little thinner than crepe consistency.
Serves: 2

---------------------------------------------------
1- Pre-heat oven to 200C (400F)
2- Cut up about 480ml (2 cups) of diced butternut squash
3- Place them in a bowl with about a tablespoon of vegetable oil, then bak for about 20 mins
4- In a bowl add about 60ml (0.25 cup) olive oil, 1 tablespoon of apple cider vinegar, 1.5 tablespoons of mustard - Adjust to taste then add a little pepper
6- Prepare Salad ingredients, chopped romain, thinly sliced apples, thinly sliced red onion, sliced almonds, pumpkin seeds, and some goat cheese
7- Throw everything in a bowl and mix it up

NOTES: Feel free to add/subtract anything you like. Taste the dressing and feel free to adjust based on your taste. If you want to make extra, add the goat cheese and dressing to your serving rather than mixing it all.
Serves: 2

Butter basted steak
---------------------------------------------------
1- Pree heat oven to 200C (400F)
2- Peel and cut potato in slices and place them on a pan
3- Mix about a tablespoon of butter and a dash of garlic
4- Brush the potato making sure you get between the slices and then bake for about 50 minutes
5- About 7 minuted before the potato is ready pre heat a pan to high, add some oil to it.
6- Start cooking the steak and add about 2 tablespoons of butter and some chopped rosemary
7- After about 3 minutes turn it over then start basting it for another 3 minutes

NOTES: The cooking time on the steak (top sirloin) will vary based on heat and how well you want it. I did mine about 3 minutes for a medium rare. The salad I used is from the next recipe I will post so stay tuned! I prefer to have the steak at room temperature before cooking. OPTIONAL - Just before you start the steak add parmesan to the potatoes and cook for a little longer. ---------------------------------------------------

Super Simple Fun Taco Night
---------------------------------------------------
1- Start to cook about a 450g (1 lbs) ground beef
2- As it starts cooking add 240ml (1 cup) water, a packet of taco seasoning mix and continue to cook
3- Prepare all your topping that you want. Completely up to you.
NOTES: Cook extra meat and you can save it for leftovers - make some wraps for school/work lunch. What do you have on your tacos?

1- Pre-heat oven to 220C (425F)
2- Cook Rice
3- Prepare and cut veggies. I used cherry tomatoes, broccoli, beans, red onion, mushrooms, zucchini and squash.
4- Add everything to a bowl with olive oil to coat, salt pepper, and mix it up.
5- Place in oven for about 20 mins
6 - In a cup add 2 tablespoons of sesame oil, soy sauce, honey a little garlic and salt and pepper to taste.
7- 5-7 minutes before its ready cook the cod and add the sauce to it.
NOTES: Feel free to add/subtract any veggies. Also if you cook more rice and veggies, you can keep them for a couple of days as left overs. In the sauce, i just added a dash of salt, as the soy sauce is already salty.

1- Pre-heat oven to 190C (375F)
2- Prepare ingredients, 80ml (0.33cup) Cherry tomatoes, mushrooms, corn, mixed peppers, 60ml (0.25cup) red onion, and parsley.
3- Cut an eggplant in half and scoop out insides.
4- Add everything to a bowl along with the insides of the egg plant, salt pepper, basil, about 1-2 tablespoons of olive oil and mix it up
5- Stuff the eggplants and bake for 50 minutes.
NOTES: Served with half an avocado and parmesan cheese
