All the better to keep your tastebuds simultaneously surprised, excited and satisfied. I had a taste at the event and absolutely loved his refreshing Belon oyster with green apple and honey, and the seared Wagyu sirloin with burrata that melted like butter in my mouth.
#RWSCurateLadiesNight takes place every Friday from 6.30pm to 9.30pm. The champagne packages are priced at $98++, $128++ and $388++ per pax, depending on what you opt for.

Does it take balls to swallow these?
Well, one thing's for sure - "tamahimo" or "chochin", the fallopian tubes of a chicken with half-formed eggs still attached, aren't quite your standard grilled skewer.
This rare, exotic internal part of the bird is an adventurous choice but it's tasty. Plus it's more of a textural experience anyway.
The smoky, sweetish sauce-coated tubes have a bouncy chewiness (similar to the braised large intestines in "kway chap") and the half-formed eggs literally explode in the mouth like an extra rich yolk version of a water balloon. Eating it hot also enhances the experience but be careful not to burn your mouth.
Do go early to the restaurant if you want to try this because quantity is limited.

Kicking off at 12noon today was the inaugural #beachbrunchbeats, a once-a-month Saturday brunch party at @foc_sentosa that brings together exactly what the hashtag says.
Expect to feel like you're transported to some holiday resort the moment you arrive as the open-air venue is located on the beach, and boasts swimming pools right at the doorstep. With DJ's spinning and joined by Jax the Saxophonist a little later, music flowed as freely as the alcohol. That is assuming you are doing the $128++ freeflow option for the brunch. And I strongly suggest you do as #Delamotte Brut Champagne, gin & tonics using #GinMare and #PureBlonde beers are offered for your non-stop drinking pleasure. Teetotalers only need to pay $88++ since they aren't imbibing those.
Me being me, naturally it was the food that I got most excited about.
Where do I even begin. Well, it started innocently enough with a short graze over a spread of housebaked breads and croissants, plus glass pots of yogurt with mango sauce and fresh fruit.
I then went to the BBQ station where pork sausages, beef and fish were grilled and served in different ways, including a simple but really tasty sandwich that wow-ed.
At the other end was a "live" station (manned by Head Chef @jordinoguerapey today) where hot Spanish tapas were being made. A marvelous uber-soft omelette with a small slice of bread, Iberico ham and tomato concasse came from here. So did the brilliant grilled prawn with kimchi foam. Probably many more as well but I wouldn't know because after that point, I was pretty much immobile in my seat, as tray after tray was presented by the team of roving servers, each bearing new and enticing tapas, both hot and cold. There was no need for me to move as I helped myself to the parade of ridiculously delicious tapas and dishes that included spherical olive "bombs", patata bravas, meatballs, zucchini bikini sandwiches, mushroom croquettas, gazpacho, squid ink paella, truffled Oreos and more. It was all a blur after a while honestly. But I couldn't be happier.

Under all that incredibly fresh ikura is fabulously soft uni (sea urchin) egg custard. Known to be a signature of Chef Kazu, this dish also has kuruma (Japanese tiger prawn), some light jelly and freshly grated wasabi (hopefully, I didn't miss anything out - eating it was keeping me rather preoccupied 😂).
I found the taste very appealing as it's light yet bright with the flavours of the sea. Frankly, I'd be happy to pay for a double portion 😋
We had this as part of our omakase dinner at Kakure which is priced at $88++ and $138++, depending on whether you choose to end your meal with the Wagyu Beef Curry Rice or Chirashi.
Very importantly, if you love sake, I highly recommend having the sake pairing ($118++). Hiroshi-san, the Japanese sommelier will select 6 kinds of sake to best go with the six courses of your omakase meal. Feel free to ask him questions about the sake he's chosen as he's very knowledgeable and pretty eloquent in English.

This was one of two entrées served at yesterday's media tasting. To me, the grilled Fremantle octopus had just the right amount of char to envelope the lightly chewy flesh in seductive smokiness. I loved how the luscious, umami ink and fennel sauce, coupled with the XO and red vinegar, to work with the burnt bits of the octopus, so that a thunderous chorus of flavours was formed.

This, everybody, is @c_j_wells and he's just opened @blackwattle_sg, his first restaurant in Asia with Unlisted Collection.
Today was my second time dining there as I had gone with @hlrys on behalf of @burpple for their media event. Most of the dishes served were the same (or with some tiny tweaks made) as what I had on my first visit. Not that I'm complaining as they're as delicious as ever. We did get to try a couple of new ones as well, so do look out for my posts on those soon.
Although the "Nation's Hottest Chef" (a title bestowed on @c_j_wells in 2016 by The Weekend Australian magazine for what he'd done at his restaurant @automata_syd) may not be present in Blackwattle's kitchen on a daily basis, he's going to be making regular trips here as he splits his time between Sydney and Singapore.
The permanent team is led by Head Chef @joeri_timmermans_ who was his Sous Chef at Automata, and his colleague at Momofuku Seiōbo back in 2013.

Oh, the joy of finding a good eating spot when you least expect it!
@dix and I stumbled upon the newly-opened "KL Shao Roast" while headed to a healthy lunch. Well, that plan went right out the window once we caught sight of their tempting display of roasted meats.
Although this eatery has only been in CT Hub for two days, they aren't a new business. In fact, during the time they were located at Katong Plaza, "KL Shao Roast" had gained quite a reputation for their KL-style "char siew" and "sio bak". They also toss their wantan noodles in black sauce which is how it's done in Malaysia as well.
I'm pleased to report that I enjoyed my order of noodles with the two roasted meats very much (price: about $6). The "char siew" was a gorgeous glossy black, and had its sweetness dialed low and smokiness on high - just the way I like it. The cut I was given today was mostly lean with just a bit of fat which suited me fine.
As for the "sio bak" (roasted pork belly), it was also really good with a thick crackling that's extremely crunchy.
Coated in a tasty sauce, the fine egg noodles were al dente and didn't clump together at all. The practice here is not to add chili during the cooking, so customers are suppose to help themselves to the sambal. Interestingly, theirs isn't the usual sweetish sort but a savoury "belachan" which I discovered, went very nicely with everything.
Accompanying the noodles was a bowl of soup wth a couple of small wantons. They were alright but clearly, it's the roasted meats that rule here.

The ever-present queue at the "Hainanese Boneless Chicken Rice" is a testament to how good it is.
Tender and moist like nobody's business—yes, even down to the breast meat—the chicken is one of the tastiest around (@zippyzipeng even says this stall's tastes better than many restaurants'). The hawker douses everything in a light soya sauce that has a touch of sweetness - something I find quite unique.
Just as marvelous is the rice which is aromatic and full of flavour. Even if you are trying to avoid carbs, I reckon this stall's one is worth indulging in.
Their chilli sauce although decent in terms of spiciness, is a bit watery in my opinion. However, since everything else is superb, it's no biggie.

I had noticed Black Knight Hotpot at MBS many months ago when the premises was under renovation but it's only when I saw @jiax22's Instagram Story recently that a visit was triggered.
There is no doubt this hotpot restaurant from Taiwan is pricey - their 2-soups-in-1-pot alone costs $48++. If you are however, partial to rich soups, you may be interested to know they justify it by serving their soups fully flavourful from the get-go.
We had the "Taro with Spare Ribs" together with the "Spicy". The former contained a generous amount of yam, spare ribs and cabbage while the latter had big cubes of "frozen" tofu and beef tendon. Both soups were opaque from the plentiful ingredients used.
There's a pretty impressive list of items for cooking. I thought the prices for those weren't too far off from similar restaurants. To give you an idea, here's what we had: Snowflake Wagyu Beef ($38++), Okinawa Black Pork Belly ($28++), Fish Paste ($18++), Mixed Vegetable Platter ($14++). The pot of hot chrysanthemum tea cost us $10++.
Black Knight offers cooked dishes as well and even have a page in their menu devoted to rice and noodles (I read somewhere their Taiwan Braised Beef Noodles is very good). So you can always skip the hotpot if you don't fancy it.
Service was decent but nothing particularly outstanding.

It's always a happy occasion when one stumbles on an item in a menu that turns out to be stellar.
You wouldn't think a platter of melted smoked cheese and grilled vegetables can bring as much happiness as it did us. It's probably a combination of my friends and I being really into good food, and the fact that this was very tasty despite its simplicity.
