Anyway, the fusion creation shown above by Chef @millermaii was one of the more filling bites we had at the tasting session.
Tucked into the soft, fluffy steamed "pau" were a thick slice of fabulously tender beef brisket, a piece of turnip omelette and pickles. For some reason, I had expected some gravy or sauce in this but the rendang flavour was found in the meat instead. It's pretty low-key though so even if you can't handle spicy food in general, this should still be fine.

New to the menu, these delectable and affordable bites at @thehangarsg punch way above their weight.
1. Halloumi Eggplant Crispies ($7+): A big winner in every way with its mash-up of the firm, chewy cheese, crisp bread, creamy hummus and the sweet and smoky roasted eggplant.
2. Carraway Beef Koftas ($6+): The seasoned meatballs were truly fragrant from the spices used to season it.
3 and 4. Tacos (3 for $12+): We tried an assortment which featured fillings of different meats, a beer-battered barramundi, and a vegetarian crunchy cauliflower. The steak with horseradish and the smoky pulled pork topped my list (but of course since I am an ardent meat-lover).
5. Stuffed Feta Jalapeรฑos ($6+): Hot, oozy cheese and fragrant spiciness wrapped in crunchy coating never disappoints. With or without the dip, I was happy to pop these in my mouth.

Had a great time at @thehangarsg with the #burppletastemakers last night. Owner and coffee-and-food-extraordinaire @pavski85 filled our bellies (and then some) with thirteen items from his new menu.
That man sure has a knack for creating audacious flavours. Take this Pulled Pork Kolo Mee ($14+) for instance. What a bowlful of yumminess. Topped with a poached egg, the huge serving had juicy pieces of pulled pork and bouncy strands of eggless whole wheat noodles tossed in a light yet appetising sauce. Make sure to mix in the kickass Vietnamese chilli paste and salty ikan bilis evenly and the shiok-o-metre goes up, up, up!

All of us at the table went gaga for this modern interpretation of a chendol by @dingdongsg's Assistant Head Chef @millermaii. It was cleverly done with coconut snow (all hail the magic of nitrogen freeze-drying), crisp coconut meringue and pandan jelly noodles. Bringing smooth creaminess to the party in the bowl was a rich gula melaka ice-cream. The finishing touch? A drizzle of fragrant gula melaka syrup (swipe to see it being poured on).
I have to say, I do love the fact that everything is made in-house too.

Inspired by the classic Filipino Pata, the Pork Knuckle ($29++) at @dingdongsg is brined for two days to ensure the flesh is deeply moist and tender even as the crackling skin is done to an incredible state of crunchiness.
What also impressed me was the attention given to the accompanying dip. Usually treated like an afterthought with token bits of garlic (if you're lucky) floating in vinegar, Assistant Head Chef @millermaii's Spiced Vinegar has neatly chopped onions and chilli padi. It was the perfect foil for the sticky-mouth richness of the huge hunk of pork.
By the way, this dish happens to be the favourite of Ziwei's, the PR executive from @blessincasia who hosted us for the tasting. Thanks to all again for having us today.

Don't miss out on ordering this when you dine here. It is possibly the best rendition of the popular "zichar" classic of bittergourd and eggs I have ever had.
While the "wok hei" is strong, the eggs are gently fried. I could taste salted egg in my first bite and upon closer inspection, spotted bits of it nestled among the thin slices of bittergourd. How clever of the chef to add that small but transformative ingredient.

A real belly-filler of a Bara Chirashi Don ($38++). Expect a big bowl heaped with assorted cubed raw fish and shrimp tossed in a light dressing. There's also refreshing, crunchy burdock root, and pieces of radish that Chef @kennykwkhoo pickled himself. I like that he uses only freshly grated wasabi too, which to me, makes a big difference.

Trust @Burpple's product engineer @sidhartha91 to spot a new F&B establishment within the first day of its opening. Once I heard about it from him, I made sure I paid "Southpaw Bar & Sushi" a visit pronto.
A dinner-only place, the $98++ omakase dinner ($68++ and $138++ options are also available) was my choice. For the first course, it was a gigantic oyster of the Canadian Rock variety. When offered by the owner Roy, I couldn't resist the unique 2-step whisky pairing of it with "The Ten #3 Light Highland".
This is how it went: I first took a sip from my glass of the Clyneish distilled whisky - it was selected by Roy (who's got more than a decade's experience in whisky and cigars) for its flowery, briny notes to complement the shellfish. The pale golden liquid (it has no extra colouring added) got my palate warmed up to better enjoy the lusciously creamy oyster which by the way, was so huge, it had to be sliced in half for eating. After both plump pieces had slipped down my throat, most of the remaining whisky was poured into the empty half-shell for me to slowly savour. Such delicious fun!
You might be wondering why the name "Southpaw". Well, Roy explained he didn't want something obviously Japanese as they aren't a classic or traditional sushi restaurant since they offer whisky to pair (but he does stock sake for the traditionalists though). Instead, he wanted something unexpected with a positive slant. Thus the name, because in the sport of boxing, a left-handed boxer would take on a "southpaw" stance, which is believed to give strategic advantage.
It was a real pleasure chatting with both him and Leading Chef @kennykwkhoo, an industry veteran with more than seventeen years of experience at Nogawa and Tatsuya, last night.

I am no expert when it comes to alcohol, least of all a whisky one but last night, I had the good fortune to have a small glass of this vintage Scotch single malt from the oldest and smallest distillery in Aberdeenshire.
It came from one of the remaining twenty bottles of the initial batch of a hundred and fifty. They in turn, had originated from a cask purchased by Roy, the owner of the brand new #SouthpawBarAndSushi place on Cavan Road. If you look closely, you can see the label had been customised for him with the word "Kigen", which means "era, origin or mood" in Japanese.
With an alcohol content of more than 60%, I was advised by Roy to let it breathe for at least ten minutes.
The gorgeous amber liquid was well worth the wait as upon my first sip, I was met with pure silk. With no fiery burn to overshadow, my senses were flooded with the richest caramel and chocolate notes, perfectly balanced with a subtle smokiness. "Heavenly" doesn't even begin to describe this extraordinary "Water of Life".
Unlike every other whisky at Southpaw Bar & Sushi, this bottle is not for sale, so my post is only for gazing pleasure unfortunately. However, I will be sharing about the wonderful omakase sushi meal (which I paid for) very soon. Do keep a lookout ๐Ÿ˜Š

Uncommon but tastes oh-so-good, this is the "Shovelnose Shark" ($60). At "Zai Shun Curry Fish Head", it is served steamed and covered in the most lip-smacking sauce of "tau cheo" (fermented bean paste), garlic and chilli. A truckload of fresh-tasting fried cubes of pork lard and chopped spring onions complete this ambrosial, collagen-and-nothing-but-collagen dish. I think I may have wiped out all the wrinkles on my face with the whopping helping I had today. #wishfulthinking ๐Ÿ˜‚๐Ÿ˜‚ .

Thanks to @ahpuicat and @vinopothamus, the owners of Michelin Starred @iggys.sg, my makan kakis and I finally made our way to this hotspot out in the (wild, wild) West: "Zai Shun Curry Fish Head Seafood".
We left it to Janice and Iggy to do the ordering as well because they're regular customers here, and I mean 4-times-a-week-regular! Smart move on our part of course because that meant we got to try the best dishes ๐Ÿ˜„
This platter of white-spotted rabbitfish ($25) was one of them. A traditional Teochew dish that peaks in popularity during Chinese New Year due to the belief that it brings luck and prosperity, it came steamed with plenty of "kiam chye buay" and cubes of crispy fried pork lard. The fish itself was exceedingly fresh and tasted pristine with none of the bitterness sometimes encountered if it hadn't been properly cleaned (burst the gall by accident and it becomes quite unpalatable).
Having eaten at "Zai Shun" at last, I can finally understand what's all the fuss about. It's quite a drive from the Eastern part of Singapore but I'm planning to take my parents for breakfast one of these mornings since they open very conveniently at 7am.
