QUINOA, AVOCADO & POMEGRANATE SALAD ❤ from @flavorsbyzendy •
▪️1 cup of quinoa, cooked (I prefer mixed quinoa which adds great colour)
▪️½ tsp ground cumin
▪️½ lime ..
▪️½ cup avocado, cut into cubes (coat in lemon juice to maintain the colour)
▪️2 spring onions
▪️2 tbsp chopped coriander (cilantro) ..
▪️1 tbsp chopped mint, ..
▪️10 cherry tomatoes, quartered
▪️3 tbsp pomegranate seeds ..
▪️Salt and pepper to taste
▪️Mint leaves for garnish.
COOKING THE QUINOA
Wash the quinoa in water. Heat a sauce pan with a splash of oil on medium heat. Add the quinoa and slow fry for one minute until the quinoa becomes transparent. Add 2 cups of water and cover with a lid. When the quinoa starts to boil, turn to a low heat and cook for 30 Minutes. Remove the lid and let the quinoa cool.
In a serving bowl, add the cooked quinoa and the rest of the ingredients. Mix together to combine. .
