Jackfruit “Tuna” Vegan Sandwiches from @mymeatlessmeals
Ingredients - • 200 g green (young) jackfruit, cut into small chunks
• water for boiling
• 1/4 tsp salt (I use black salt)
• 1/2 tsp black pepper
• 2 tsp nori powder (kelp powder)
• 1/4 tsp garlic powder • 1/2 tsp onion powder • 1 tbs lemon juice
• 4 tbs vegan mayonnaise (or more- if you enjoy living on the edge 😁) Instructions:
1. Boil green jackfruit chunks in water on medium heat until softened. (About 40-50 minutes, depends on the kind of jackfruit you use).
3. Drain cooked jackfruit chunks and transfer to a food processor. Pulse blend for 5-10 seconds just until the texture comes out looking like flakey tuna (as shown in video).
4. Use cheesecloth or a nut bag to extract the excess water from your jackfruit “flakes”. Make sure you squeeze out all the liquid. The dryer your jackfruit gets, the better the texture for your vegan tuna!
5. In a bowl, add your fake tuna, followed by seasonings: salt, pepper, nori powder, garlic powder, onion powder, lemon juice, and vegan mayonnaise. Mix well. Have a little taste and add more salt, lemon juice, vegan mayonnaise, or even vinegar if preferred.
6. Construct your vegan tuna sandwiches. I use bread, greens of choice, and tomato slices. But you could add anything to your sandwiches- as long as they’re cruelty free. 😋

SPANISH BUDDHA BOWL INGREDIENTS: -

FOR THE POTATOES: -
- 2 large potatoes, cut into cubes
- 4-5 artichoke pieces from a jar
- 1 sprig rosemary
- 3 cloves garlic, smashed
- 2 tbsp paprika
- 2 tbsp olive oil
- Salt & pepper to taste

FOR THE PEPPERS/ASPARAGUS:
-
- 4-5 small peppers
- 8-10 pieces of asparagus
- 1 tbsp olive oil
- 1 tbsp white wine vinegar
- 1 tbsp maple syrup
- Salt & pepper to taste

FOR THE QUINOA:
-
- 80g dry quinoa - 1 veg stock cube
- 1 pinch saffron
- 1 small onion, finely chopped
- 1 bay leaf

FOR THE DRESSING:
-
- 20g cashews
- 30g hemp hears
- Half clove garlic
- Small handful fresh parsley
- Juice of half a lemon
- Salt & pepper to taste

FOR THE SALAD:
-
- Half a cucumber, sliced
- 5 cherry tomatos, halved
- 5 olives, halved
- Handful of favourite salad leaves

DIRECTIONS:
-
1. Mix all the ingredients for the potatoes together in a bowl and then place on a baking tray. Roast for 30 mins in an oven set at 180ºC.
2. Mix all the asparagus and peppers with salt, pepper & olive oil in a bowl then place on a baking tray. Roast for 20 mins in an oven set at 180ºC. When they come out sprinkle with the vinegar & maple syrup.
3. For the quinoa, fry the onions in oil for a few minutes then add the rest of the ingredients to the pan. Simmer with the lid on for 15mins until the quinoa is cooked and fluffy.
4. For the dressing simply blend all the ingredients until smooth.
5. Dress the salad ingredients with olive oil, lemon & fresh parsley. Season with salt & pepper.
6. To serve follow video instructions. ENJOY! :) ✌️💛

ASIAN COCONUT NOODLE SOUP! -
INGREDIENTS:
-
- 150 g rice noodles, dry
- 1 tsp grated garlic
- 1 tsp grated ginger
- 1 tsp red chilli flakes
- 4 tbsp soy sauce
- 1 tsp sugar
- 2 veg stock cubes
- 1 can coconut milk
- 80g broccoli, cut into florets
- 80g green beans, cut in half
- 50g carrot, sliced
- 1 medium onion, cut into chunks
- 50g mushrooms, sliced
- 1 tomato, cut into chunks
- Juice of 1 lime

METHOD:
-
1. Heat about 1 litre of water in a large pot. Add the veg stock, ginger, garlic, chilli flakes & soy sauce. Bring to the boil and add the veg.
2. Simmer the veg for 3-4 mins. Then add the coconut milk, sugar & noodles. Simmer for a further 3 minutes.
3. To finish add fresh lime juice :) ENJOY!
