This was lunch from today and I'm making the same for round two. πŸ˜… Tomorrow we are travelling to Madrid so I'm making us a to-go lunch for tomorrow. We are taking a bus there, and it's a 6.5 hour drive but it was the cheapest option. This way we'll still have our healthy (and cheap πŸ˜‰) rice and veg lunch on the bus, along with other yummy snacks. πŸ₯—πŸšπŸ’ I can't wait to be in Madrid tomorrow! It's one of my favourite cities (very vegan-friendly as well, 20 all-vegan places!!) and the one that motivated me to give this nomad thing a try. πŸ˜‰ We are also meeting up with @alternativetravelers πŸ™ŒπŸ™Œ They're another travelling vegan couple so it will be nice to dish with them! We eat at least two kilos every day. πŸ˜… I had some with my cinnamon oatmeal this morning, along with some frozen raspberries, coconut flakes, and cocoa nibs. I'll probably have cherries for dinner since we just picked up another box from the fruterΓ­a. 😍 I hope you're having a good day so far! πŸ€—

Lunch today. πŸ₯‘πŸ‘Œ I'm glad it's Sunday today because that means a new week begins tomorrow! We have some fun planned for this week. 😜 We'll be in Madrid this Tuesday. I'm so excited to revisit one of my favourite cities! We'll only be there for the day but have a few days planned out for the end of our time in Spain, in August, before we travel to Zagreb. πŸ‡­πŸ‡· It will be fun to show @roaming_kuba around since he's never been. πŸ€—

Happy Sunday πŸ’™πŸ’™ I got a new bowl for oatmeal, just to change things up. I get excited about bowls, what can I say. πŸ˜‚ I like this one so we'll see how it goes for photos. 😜 I just uploaded my video for today to my YouTube channel. It's a vlog of our river hike in Nerja. I hope you like it! It was such a nice hike through the water! We also saw three dogs and two horses along the way. πŸ‘Œ

Today's lunch was a winner as usual. πŸ₯—πŸšπŸŒΆ I made the same veggies as yesterday, minus the zucchini because we forgot it. It was still tasty though. πŸ˜‹πŸ‘Œ We just got back from a quick walk down the beach and now we're going to cool down and watch a movie. I hope you have a good weekend! Oatmeal with blackberries, blueberries, and cocoa nibs to start my day. For the record, mint looks pretty on oatmeal but it doesn't taste so nice mixed in. I had to pick it out after I mixed it all up. πŸ˜‚ and I meant to post this earlier but I accidentally fell asleep. πŸ˜…πŸ˜΄ Now it's time to start making lunch. I hope you're having a good Saturday! β˜€οΈ

We missed our typical lunch yesterday because we were hiking. We still managed a little picnic in the shade with brown rice and cherries since I cooked some brown rice in the morning and brought it with us. πŸ˜…πŸ’ But today we are back to our favourites for lunch. πŸ˜‹πŸ˜‹ Brown rice with sautΓ©ed veggies. I cooked them with water and seasoned them with a little coconut sugar, oregano, thyme, and this spice mix we found at Carrefour: paprika, cayenne, cumin, and black pepper. I also added a little tomato paste just to change it up. πŸ…πŸ‘…πŸ’¦ For the avocado I drizzle fresh lemon juice and sprinkle with chili flakes. We ate all of this with crunchy corn cakes. πŸ₯‘πŸ₯—πŸŒΆπŸŒ½πŸš Some people might think cooking without oil or salt means that your meals are bland, but that couldn't be further from the truth! πŸ˜… Simple, healthy, and sooo delicious!

Happy Friday! πŸŽ‰ My oatmeal was so good this morning after a deep sleep! I cooked blueberries and blackberries into the oatmeal (along with almond milk, water, and cinnamon) and topped it with more blackberries, nectarine, coconut, and chia seeds. πŸ‘πŸŒ΄πŸŒž We walked 12.5 miles 😱 and I was so tired from walking through that river. We ate so much food yesterday too. πŸ˜… Also thank you so much for 12k followers here! Good morning! β˜€οΈ A little #tbt for you today. I really like this photo from when I was living in Dundee so I wanted to share it again. Also we have an early start today since we are going to Nerja for a hike, so I'm short on time for an oatmeal photoshoot. πŸ˜œπŸ˜… We are hiking up the Rio Chillar today! This should be a nice hike in the heat since we have to walk through the river. πŸ€—πŸ’¦

These beets! 😍 Lunch today was excellent as usual! Brown rice, sautΓ©ed veggies, steamed beets. πŸ™ŒπŸ™Œ The fruterΓ­a sells beets steamed in little packs. I sautΓ©ed the veggies with water and seasoned them with thyme, paprika, and coconut sugar. The best part about eating this way is that you don't really need a recipe. Simply sautΓ© your favourite veggies with water and season them with any spices and herbs you like. πŸ˜‹ We went to Carrefour today and loaded up on food, specifically snacks for our hike tomorrow. I also got my hair cut, which is the third time I've gotten it cut in a foreign country since I left the States. πŸ’‡πŸ» Scotland, Germany, and now Spain. And that is the order of best haircut to the worst. πŸ˜‚ It's not terrible but isn't quite what I wanted...guess that's what happen when you try explaining your haircut in a foreign language. πŸ˜‚πŸ˜‚

Good morning! 🌞 I woke up early today because we are trying to shift our sleep schedule. 😴😡 We feel more productive when we wake up and go to sleep early, but lately we've been sleeping in and going to bed later and later! So today was day 1 of forcing an early morning. πŸ˜… In a week, I'll be adjusted to it fine! Anyhoo, my breakfast was oats cooked with cinnamon, sugar-free almond milk, and water topped with nectarine, banana, frozen blueberries, a little shredded coconut and cocoa nibs. Frozen berries are so pretty, don't you agree? 😍 Also, I just uploaded my MΓ‘laga vlog to my channel. I show you both massive castles, the views of MΓ‘laga below, and a bit of the city! Lunch from earlier. 🍚πŸ₯‘πŸ…πŸŒ±πŸ˜‹ Brown rice, sautΓ©ed veggies with water seasoned with thyme, paprika, and coconut sugar, and the best avocado!! So creamy! 😱 I love eating this way. So much yummy food, as much as I want, lots of energy, no stomach issues and I don't have to worry about my weight fluctuating. I'm actually losing weight without even trying. Not that I needed to lose it, but I feel more healthy now that I've trimmed down significantly. πŸ’ͺπŸ™‚ Whole plant foods all the way. πŸ’―
