Happy Monday with a simple strawberry and watermelon juice ๐Ÿ’• Making the most of these last summer fruit before switching to pumpkin everything

Yesterdayโ€™s sunset at Hermosa Beach was so magical ๐Ÿ”ฎ and even more so with tortilla chips and hummus โ˜บ๏ธ

Layered goodness this morning ๐Ÿ’š๐Ÿ’œ Blueberry and spinach nicecream with kiwi pieces and frozen bluebs on top
This weekendโ€™s weather is sooo nice, going to spend as much time as I can outside ! What about you guys ?

Probably the last time the farmer's market will have berries ๐Ÿ˜ช but at the same time I've purchased my first pumpkin of the year and pumpkin spice and made curry so I guess I'm ready for fall ๐Ÿ‚

At home and on the go ๐Ÿƒ๐Ÿผโ€โ™€๏ธ I've been meal prepping again for my internship lunches and it's so convenient to gain time and eat healthy.
These lunches had rice and beans cooked with salsa sauce, carrot sticks, spinach, tomato, lime and lime fingers

Busy busy week balancing between classes, internship, working out every day, social life and me time (aka watching Netflix in my bath) but always time for a good breakfast. For example a banana, strawberry and peanut butter combo makes my morning a little better โ˜€๏ธ

Green power this morning ๐Ÿ’š๐Ÿ’š๐Ÿ’š I seriously need this for the studious day I have ahead. Having an internship two full days in addition to my academic track is definitely going to be challenging but it's an incredible opportunity to be at a law firm in LA as a Political Science and pre-Law student ๐Ÿ‘ฉ๐Ÿผโ€๐ŸŽ“What do you guys study ?
Recipe :
3 handfuls spinach โ€ข 2 carrots โ€ข 3 bananas โ€ข 0,5L filtered water ~ Topped with frozen blueberries, goji berries, kiwi, dried cranberries

Happy Fry-day ๐ŸŸ with sweet potato fries, beans, spinach, corn, carrot sticks, spicy salsa and lime juice !

Mexican style buddah bowl ๐ŸŒˆ Simply tossed together oven baked tortilla strips, diced tomatoes, black beans, mango chunks, diced red onion, corn and spicy salsa on a bed of shredded lettuce and drizzle the finished salad with lime juice ๐ŸŒถ

To celebrate the last days of summer I thought I would share my raspberry and lemon raw bars recipe โญ๏ธRaw vegan raspberry and lemon bars recipe
Ingredients :
Base :
1 cup almonds
1 1/2 cup pitted dates
Lemon filling :
4 frozen bananas
1/2 lemon juice
1/2 tablespoon lemon zest
1/4 cup agave or maple syrup
Raspberry filling :
2 cups frozen raspberries
1 tbsp agave or maple syrup
Directions :
For the base add the almonds and dates to a food processor and pulse until it forms a sort of paste. You can add a tiny bit of water to help blend better. Press the dough into a cake pan lined with parchment paper and set aside.
For the lemon filling : Blend all ingredients into a high speed blender or food processor until creamy. Pour the filling onto the crust and spread it evenly with a spatula until it covers the base evenly. Let it set in the freezer a bit while you make the raspberry filling.
For the raspberry filling : Blend or process all ingredients together. Pour on top of the lemon layer.
Final bars : Place the pan in the freezer for at least 3 hours but itโ€™s even better to let it set overnight. Once itโ€™s time to serve let it thaw for 10min and cut into bars or squares. I recommend serving it with Thai basil for a little twist.
