you can never go wrong with noodle soup 😍😍 well i guess that is what this counts as πŸ˜‚ just noodles with vegetable stock, lots of spices, curry paste and whatever vegetables you fancy! and then top it with extra chilli/peanuts etc 🌢 when i had this it took less than 5 mins as i just boiled kale and courgette for like 2 mins in a big pan, then added vegetable stock, noodles, spices and drained black beans! and it’s honestly that easy πŸ™ŒπŸ™Œ

i finally got to try the goodfellas new vegan pizza (swipe for packaging)!!!! πŸ• after feeling not 100% today after last night this was the best food πŸ˜‚πŸ˜‚πŸ™Œ Β£2.50 and found in the frozen vegetarian section sainsburys πŸ‘ it was so so delicious, the base was super good and the falafel and houmous toppings work so well! it also has a nicely spicy tomato sauce that gives it a good flavour without it being extreme 🌢 and with plenty of roasted onion and peppers too, it really is the whole package in my opinion!! i’m seriously so impressed with goodfellas for releasing this at a decent price too, times are changing man 🌱

veggie breakfast style kinda thing with sausages, portabellas, spaghetti hoops, spinach and carrots πŸ₯• don’t judge the carrots ok they were the only veg i had and i like them πŸ˜‚πŸ˜‚ i cannot believe i used to hate mushrooms and now i can eat a whole pack of portabellas and enjoy every moment loool πŸ„

i’ve stopped posting as frequently recently just because i pretty much eat the same things every day πŸ˜‚ i’m sure you can all guess what this is and yep it’s a photo of banana and cinnamon oats with all the other usual stuff i add lol πŸ‘ and obviously the spoon can stand up as that’s how you know you’re doing it right πŸ’ƒπŸ½πŸ’ƒπŸ½ but yeah lol i’m pretty busy atm and i know what i like so i basically just repeat it and i’m not even sorry πŸ€·πŸ½β€β™€οΈπŸ€·πŸ½β€β™€οΈπŸ”₯

veggie noodle stir fry (just made with rice noodles, mushrooms, butter beans, courgette, vegetable stock, garam masala and chilli flakes) plus a tesco peanut and avocado burger for a sort of strange but v good meal this evening πŸ˜ŠπŸ‘ i had never tried these burgers before despite knowing they’ve been around for ages, as i hate avocado so that put me off, but they’re honestly INCREDIBLE. they just taste so peanutty and delish with lots of veg and beans too which is ace, i defo recommend them!! this was an ace meal to have before going out as it’s v filling πŸ™ŒπŸ™ŒπŸ’ƒπŸ½ i’m very excited for this evening as i feel like i haven’t been out properly in ages as it’s been about 2 weeks (πŸ˜‚) but after an exam today i’m looking forwards to a lil celebration yaknow πŸ‘πŸ‘ have a good evening everyone!!

a very simple but quick meal this eve of potato waffles, black beans and broccoli with ketchup 😊😊 super ideal and fast after getting back from yoga kinda late this evening!! and also i don’t really have much other food so πŸ˜‚ it’s hit they point of term again where i don’t want to food shop as im going home for 4+ weeks in less than a week, so this week’s meals will likely be very interesting combinations of whatever i can salvage tbh πŸ€·πŸ½β€β™€οΈπŸ€·πŸ½β€β™€οΈπŸ˜›

cold mornings call for warm oats (well it’s not like i have this everyday but whatever πŸ˜‚πŸ˜‚) πŸ”₯ banana and cinnamon with soya milk, milled linseed and toffee sauce πŸ˜‹πŸ˜‹

veggie sausages, veggie rice and some fried mushrooms, courgette and spinach for a v easy dinner this evening πŸ‘πŸ‘ i know i’ve said this before but i really cannot get over how much i love the original linda mccartney sausages now when i used to absolutely hate them. like now i crave them so much and they’re probably my favourite meat substitute πŸ˜‹πŸ˜‹

you can never go wrong with noodle soup 🍜 well this isn’t really noodle soup properly probably but that’s what i’m calling it πŸ˜‚ i made it with a tin of hot and spicy beans, rice noodles, broccoli and mushrooms with added vegetable stock and spices!! and now i need to get moving and get back to uni for an afternoon of lectures so goodbye and happy friday 😊😊

a big mixture of leftovers for dinner this evening! meat free mince, half a tin of butter beans, half a tin of lentils, half a courgette, some kale, some mushrooms and rice noodles cooked in garlic olive oil, garam masala, turmeric, cumin and black pepper 😊 and then i also coated it in nutritional yeast and sriracha because life 🌢 i just put everything into my big wok and cooked if for around 10 minutes, so this was a super quick meal which was needed after a long day of uni day! i have straight lectures/seminars from 9am-7pm on thursdays so the days generally consist of eating whatever i can find walking from place to place and sharing packs of biscuits in lectures lol πŸ‘ but it means im always very hungry by the evening as i never get a chance to β€˜properly’ eat so i very much enjoyed this!!

throwback to a fab weekend in glasgow early this year with some amazing gals!! i literally cannot believe this was in january and now ive pretty much finished my second year of uni in terms of teaching already?!?! 😱 second semester has gone unbelievably quickly and although i am very ready for the easter break starting at the end of next week, i am not ready to start revision and everything for exams πŸ˜‚πŸ˜­ ah well tho, that’s life i suppose and im looking forwards to chilling at home too as well as seeing these gals again for a catch up in london!!

oats with banana, almond butter, maple syrup, milled linseed and soy milk πŸ˜‹πŸ˜‹ before i head to uni today! this banana was so so ripe and spotty (the best way don’t fight me here) so the sweetness in this was incredible ngl
