CAROB ALMOND FREEZER FUDGE
I’ve recently discovered Carob and it’s been love at first taste! Like “where have you been all my life”?🤔😃
More about it’s health benefits in another post cause oh yes there will be many posts featuring carob- stay tuned!!
Here’s the first of the series from @ohsheglows
Crunchy and dreamy decadence!!

Mix all together the following:
1/2 cup melted virgin coconut oil
1/4 cup almond butter
1/4 cup carob powder
1 tbsp unsweetened cocoa powder
2-3 tbsp maple syrup
1 tsp vanilla extract
A pinch of salt
1/2 cup rice crip or quinoa crip
Flatten into a lined loaf pan and pop in freezer for 20 mins or until solid.
Then cut and enjoy this special treat!
Dairy free, gluten free and delicious!

STUFFED PEPPER - oh YUM!
I loved preparing this recipe from @minimalistbaker.
Mexican inspired flavors, plant-based and full of colors - so good!
An awesome #meatlessmonday recipe! Just 10 ingredients!

1 cup quinoa cooked in vegetable stock
4 large red, yellow or orange bell peppers (top & seeds removed)- brushed with olive oil.
In a large pot- mix the quinoa with 1/2 cup salsa, 1 tbsp nutritional yeast, chili powder, cumin, garlic powder , a can of black beans and a can of corn.
Stuff the bell peppers with this mixture and cover with aluminum foil for 20 mins at 180. Then uncover and cook for another 30 mins in oven.
Serve with sliced avocado, more salsa, hot sauce & lime.
So so good!!

3 ingredient pancakes🥞
1 cup almond flour, 2 eggs, 1/4 cup water & 1.5 tablespoons honey
Mix it all to make the batter & heat your skillet well before flippin’ them!
You can eat with more honey, berries or nut butter!
Gluten-free, refined sugar free, dairy-free and mostly delicious!

I’m not a vegan myself (tried it & it’s not for me!😊) but I like what it promotes- more plant-based foods!!🌱🍀🌿
Say yes to having plant based natural foods more often in your diet!
Being a flexitarian, I eat more plant foods everyday (veggies, fruits, grains & legumes) at every meal and I choose meat, fish, eggs & dairy occasionally.
I feel healthier, lighter, more energetic & haven’t had the flu in I can’t even remember!!✌🏼✨

Broccoli 🥦, mushroom 🍄, onion and squash loaded with spice & herbs sautéed to perfection then roasted in the squash & eaten right out of the oven!

Last week I made these delicious moist BANANA OAT COOKIES & they were a total hit!
Made with wholesome natural ingredients; they were so moist & yummy for breakfast or anytime of the day! Plus there’s lots of cinnamon in there.. always a winner with me!
Wholesome ingredients as follows:

🍌Fruit: 4 mashed bananas & 1/4 cup raisins
🌰Nuts: 1/2 cup almond flour & 2 tbsp chopped walnuts
🌾Whole grains: 2 & 1/2 cup oats
✨Seeds: 1 tbsp chia seeds
🍯Sweetness: 1 tbsp honey
✨Spice: 1 tsp cinnamon
Mix them all together ; shape into round cookies & bake for 20 mins at 200 celsius.
Store in fridge & eat with coffee ☕️ or broken over yogurt!
P.S: they are Dairy-free! .

PUMPKIN SPICE ENERGY BALLS
Continuing on the love for all things pumpkin & pumpkin spice- these energy balls are a winner!!
Gooey, chewy & so YUM 😋 and best of all they are made with all the good stuff!

1 cup almond flour
2 tbsp pumpkin puree
1/4 cup coconut shreds
1/4 cup peanut butter(unsweetened)
1/2 cup chopped peacans (or your fave nuts)
2 tbsp maple syrup
2 tsp pumpkin spice
Mix it all up- roll into balls and put in fridge to set.
So yummy pre or post workout!

PUMPKIN SPICE ALMOND MILK LATTE
The healthy version which features all the yumminess with none of the added sugars!
⚠️Warning: Pumpkin is loaded with vitamin A which may lead to glowing skin and sharper eyes! 😉
So easy to make:

1/2 cup almond milk
2 tbsp pumpkin puree
1 tsp pumpkin spice
1 tbsp maple syrup
Heat the milk then blend all the ingredients together to get that yumm froth.
Pour over your fave espresso shot-mine was @nespresso arpeggio.
Sprinkle a dash of pumpkin spice and enjoy that warm, spicy cuddle in a cup!

A PINK VEGAN MACn’CHEESE BOWL!💗😜
Jokes aside, this was oh so yum & fun to make.
Blend 2 beetroots into my cashew cheese sauce & job done!

Sauce- just blend:
1 cup soaked cashew nuts
1 cup water
1/3 nutritional yeast
1-2 cloves garlic
1 tsp onion powder
Paprika, black pepper & salt to taste
Juice of half a lemon
2-3 cooked beets
Mix into cooked pasta and dig in! I used a chickpea pasta for that extra protein .
