Almost the weekend & if you are planning a cozy night in then I have the perfect dinner for you: warming, rustic & packed with deliciousness!
ZUCCHINI CHICKPEA STEW- I got this inspo from @almondandfig and made a few changes to the veggies used!
Recipe:

In a medium pot, sauté 1 chopped onion, 2 minced garlic cloves then add your spices, 2 tsp each paprika & ground coriander then 1 tsp each cumin, turmeric & 2 bay leaves. Once fragrant- add 4 medium chopped tomatoes (i like to remove the seeds), 1 can of drained chickpeas, 1 chopped zucchini & 1 chopped kohlrabi. Mix well till sautéed then add 1 cup water or veg broth & black pepper. Simmer for 15 minutes till veggies are cooked through.
You can have this over rice, quinoa or just as is!

It’s packed with flavor, goodness and makes a super light dinner.

Recipe:
1 cauliflower cut into florets
Add in a zip-lock bag & mix with:
2 tbsp maple syrup or honey
2 tbsp Sriracha sauce
2 tbsp olive oil
1/2 tbsp soya sauce
Black pepper
Mix & shake the bag till all florets are coated
Pop in oven for 30 mins at 200 degrees celsius till baked & crispy on the outside.
Serve over fluffy quinoa or warm lentils!

What makes a salad yummy?! The dressing ofcourse!!
Made this delicious, zesty, garlicky LEMON TAHINI GODDESS dressing last night!
You can literally have it over ANY salad bowl 🥗 - I had mine over a simple LENTIL SALAD

Lentil salad:
Lettuce mix
Slices cherry tomato
Cubed red pepper
1/2 chopped red onion
Goddess dressing:
1/4 cup Tahini
1/4 cup nutritional yeast
3 tbsp olive oil
1 garlic clove
1/2 cup lemon juice
Salt & pepper
Blend till mixed well. You may need to add some water to loosen the dressing a little.
Drizzle & munch💚

This is just the best breakfast in the world!
TURKISH POACHED EGGS
So much flavor 🤤.. garlicky yogurt, a poached egg and a chili butter sauce- a complete sensation!!🌟
Recipe inspired by @nigellalawson .

Mince 1 garlic into greek yogurt & mix- set aside
Melt 2 tsp of butter- once melted turn off heat- drizzle with some olive oil & add 1 tbsp of chili powder- mix and set aside.
Poached egg:(which I failed!😔)
Break an egg in a cup- pour 1tsp of lemon juice on the egg white
Pour into a pot of boiling water and the white should directly “poach”- other “how to” poached eggs tips are in my instastories thanks to @saras_healthy_kitchen & @simachamma
Place the egg over the yogurt and pour the chili butter on top. Sprinkle some dill & dig in with toasted bread!

Sauté crushed garlic & chopped onion in olive oil. Add the chopped mushrooms (150g) and then add your spices; black pepper, paprika & salt. Cook on medium heat till they lose their water & turn brown. Sprinkle with chopped coriander ; turn off heat. Heap on toasted toast & munch!

Just sweet enough- I used natural unrefined sugar substitutes & lots of spice!
STAR-SHAPED GINGER COOKIES🤩🍪
You have to make some of these over this festive season...so easy & so FUN to make!

Cream together 1/2 cup butter & 1/2 cup coconut sugar then add 1/4 cup maple syrup, 1 egg, 1 tsp vanilla extract.
In a seperate bowl, mix together 1 3/4 cup flour, 1/2 tsp baking soda, pinch of salt and 2 tsp ginger, 1 tsp cinnamon, pinch of cloves & nutmeg.
Add dry mixture into wet one. Mix well & place dough in fridge for at least 2 hours or overnight.
Roll out and use your cookie cutters to make the shapes you want⭐️ then pop in oven for 8 mins at 180 degrees celsius.

I know a #lovebowl smoothie may not be too tempting in the cold.. but trust me this green one will give you all the right energy to kick start this Sunday morning!

Handful of chopped kale
1 Kiwi
2 celery stalks
2 small cucumbers
2 tsp grated ginger
1/2 frozen banana
2 tbsp greek yogurt
1 tbsp honey
Blend all till smooth with 1/2 cup almond milk or coconut water.
Top with oats, flakseeds and some nuts!
