We wake up every morning to grab that coffee or breakfast sandwich, queue up for that hot lunch, grab that drink to-go, or attend an evening event catered. Behind the scenes are makers balancing flavors, permits, and kitchen schedules to serve your taste buds. Though, a sour taste was served up to hundreds of businesses this past weekend with a sudden closure without warning of Pilotworks, a food incubator for housing growing businesses. We experienced the exciting nuances and lessons of a start-up that falls hard when overly ambitious investors can spoil good things at the expense of others and spend too fast. It was as if your home was ripped under your feet. Why we share this news? The best thing you can do, wherever you are in the world, is to continue to support the independent makers you come across everyday for any meal and appreciate those moments you support any growing food business. Especially to our friends who can whip up meals filled with plant vibes. Follow them as they evolve to something greater or leave a thank you or any feedback for any order. Your support keeps our souls alive. While at @ubekitchen we just experienced our most challenging moment of chaos, we found solace in you, our followers, and the food community of NYC to come together to forge ahead. And just like the rice crispy on the flan of this photo, we got hit, but you can't knock us down! Thank you for taking the time to read this, those that have helped us grow over the past 2 years, and those that helped us in these past few days to our new kitchen space. 💜 Visit the coalition's website on our bio for a full list, and news of those impacted to show your support.
