A great first impression at the new Noma in Copenhagen is this sea snail shell filled with a shot of broth flavored with mushrooms and seaweed. Revivifying!

One of my favorite memories from last week’s trip to Copenhagen was Sunday lunch at Barr, which replaced the original Noma on the waterfront. The schnitzel topped with elderflower capers and minced anchovies was perfect.
