These are my favorite kinds of meals because they’re so easy to throw together with leftovers in the fridge. Any veggie or bean or fruit you have on hand goes perfectly!

Any nut based dressing will work. This one has cashews, oranges, strawberry balsamic vinegar, dates and hemp seeds!

So simple yet so filled with goodness. =====================================
My red cabbage and red onion saute (I just sautéed it in a pan with a couple tablespoons of water), some chickpeas and a few sesame seeds.

Did you know that sesame seeds are a super high calcium food? So therefore tahini (ground sesame seed paste) is a great choice as well. You could eat this little snack just how it is, or drizzle some balsamic vinegar or even a tiny bit of Bragg’s. And it’ll keep you full for a long time!

You can just take a pile of a few veggies or fruits and beans and use a simple dipping sauce to have a fun meal, or just mix it all together for new interesting combos!

This is fresh raspberries, chickpeas, red cabbage starry and sautéed shiitake mushrooms, with a dipping sauce made from almond butter, balsamic vinegar and dates. I ended up just mixing it all together and having different surprising bites! :)

A lunch like this takes 5 minutes to throw together if you've already prepared the toppings items earlier in the week. Try to make one thing per day and you'll have a gorgeous salad after just a few days with only minimal work per day!

Dressings for this could be anything that's your favorite, or avocado and lime, or balsamic vinegar, etc!

NOWWWW this was a cool experiment!! The color difference is subtle in the picture but was cool to watch before my eyes: In this bowl is the same pomegranate overnight oats (rolled oats soaked in pomegranate juice overnight). +++++++++++++++++++++++++++++++++++++++
And then to one side, I added grapefruit juice and mixed it in and VOILA!! IT went from the regular purple/lilac on the right side to the magenta on the left side. Right before my very own eyes! So fun!! :D

Then topped with fresh blueberries and said grapefruit. Yum! Delicious as well as fun!

A bed of mixed greens (about 5-6 cups) topped with blood orange, roasted broccoli, sauteed shiitake mushrooms, chickpeas and red cabbage stir fry. Use lemon as a dressing and add avocado too if you're feelin' saucy! :D
