Made a bunch of Pops blended with frozen fruits (mango, pineapple, blueberry) using homemade almond milk, also added a layer of coconut chia pudding, topped with chocolate magic shell, a genius recipe by @thefirstmess #thefirstmesscookbook .The chocolate recipe is simple, delish and economical. It uses cocoa powder, so no need to melt solid chocolate. yay and yum!

Tahini Brownies for dessert! I used a recipe from #happyheartedkitchen @jodicatherinekay and adapted it a bit to add the tahini/beet swirl. These will be perfect with some dairy-free vanilla ice cream. Yummmm #govegan

Pancake Breakfast topped with blackberry/blueberry compote and some store bought coconut yogurt. I used sorghum flour as the base so it's gluten free. Hubby said it tasted like a light and sweet cake. Recipe @yumuniverse #pantrytoplate cookbook. I used the pancake and compote templates. Pretty parfait on an urban cloudy day. Bad rhyme 😂On my way to work, had to open up my breakfast parfait to take its pic in front of this graffiti art that I pass every morning. Parfait: Forager yogurt, beet and spriulina chia, topped with homemade granola, pom seeds, and some mint from my container garden. My sweet kiddo made the strawberry and apple hearts 💚She had hers without the spirulina.

Yay no oven or stove needed for Veggie Spring Rolls! Coconut lime rice from yesterday, cabbage,carrots, cucumber and a store bought chili sauce for dipping 😋I'm also going to make a peanut sauce to go with but I need to walk the dog now 😉🐶

Chilled Apple and Onion Soup, for this 🔥temp weekend in NYC. Topped with an out of sight Crunchy Smoked Chickpea and Toasted Coconut mix. Pretty amazing. Enchiladas for Dinner. An easy recipe using a super tasty homemade red enchilada sauce (made over the weekend) and store bought refried pinto beans. Recipe @minimalistbaker cookbook. I also topped it with avo,red onion,lime, and a cashew sour cream recipe @hotforfood I made the sour cream on the urging of both @nem_belair and @plant.powered.steph who both raved about this yummy topping in their insta stories.
