Hiyayakko Tofu! ๅ†ทใ‚„ใฃใ“่ฑ†่…
Can't get enough of fresh tofu- it's so creamy and has such a nice flavour. Hiyayakko is just cold tofu with toppings of your choice. This has freshly grated wasabi & ginger with dark soy sauce (thicker and sweeter than regular soy sauce).
GLUTEN FREE? I personally prefer the taste and mouth-feel of gluten free soy sauce to tamari.
Should we have a tofu making class? ๐Ÿค”

Some amazing SUDACHI kombu ponzu for Japanese Night on Friday (tickets in bio). I'm SO EXCITED to share this with you!

Ponzu (citrus-soy dressing) is traditionally made with sudachi; not lemon, orange or yuzu juices that is common outside of Japan (because it's hard to get!).
๐Ÿ‹Sudachi is a Japanese citrus that looks like a dark green, round lime and tastes zesty and slightly sour.
๐ŸฑSharing hard-to-find flavours & dishes is what I'm all about!
๐ŸขThis @wasabigrowersuk ponzu will be paired with seasonal veggies and seitan yakitori at @tencablestreet. See you there my lovelies! x

Fast & Fat buckwheat noodles, traditionally served with wasabi, ginger, spring onion and sometimes tenkasu (tempura batter bits) when there's hot broth.๐Ÿฒ
Here I used kosho (yuzu & chilli paste) and hana arare (tiny rice cracker balls) in a konbu dashi-soy-sake hot broth. ๐Ÿค“ A spicy, crunchy treat!
The Pop Up will have zarusoba, a cold noodle with dipping sauce and yuzu kosho on the side if you wanna spice it up! ๐ŸŒถ๏ธ

Have you ever tried lotus root (renkon)? I like to stir fry it with green beans (ingen) as they are both sweet and crunchy. I add a splash of soy sauce and a pinch of sugar to tease out more of those flavours! I added hijiki seaweed for added earthiness balance. Topped with togarashi (a spicy 7 spice blend). ๐ŸŒถ๏ธโค๏ธ

It is my 17 YEAR Veganniversary! (and 21 year vegetarianniversary respectively). I lived the dark ages in the countryside. Soymilk didn't exist there for years to come. No translation apps in Japan. Always the only vegan. And now? Wow. How amazing/easy/acceptable has veganism become?!

๐Ÿ‡ฏ๐Ÿ‡ตMiso dengaku ๅ‘ณๅ™Œ็”ฐๆฅฝ is a sticky sweet & savoury paste great for vegetables and tofu. Here I made two of the most popular types: tofu and nasu (baby aubergine/eggplant).

๐Ÿฎ่ฑ†่… tofu: is with haccho, a dark 100% soy long-fermented miso popular in Nagoya & surrounding areas. I added only a little sugar & sake to keep the flavour strong.

๐Ÿ†ใชใ™nasu: is with saikyo, a sweeter white miso popular in Kyoto (Kyotoians have a sweet tooth!), so only a little sugar and a splash of mirin were needed to keep this bright and sweet.

Both were grilled to caramalize the sugar in the misos just a pinch and topped with toasted sesame. Both misos are also from @tidefordorganics who are super legit ๐Ÿ‘Œ

Pomegranate & mint wagashi

Saying goodbye to the last pomegranates and welcoming the mint and pansies fresh from my garden, wagashi reflects the seasons๐ŸŒบ๐Ÿ€
Wagashi is a traditional style of Japanese sweets made usually to serve with tea ๐Ÿก๐Ÿต This is made with kanten (agar) which is from seaweed- making many wagashi naturally vegan!๐ŸŒฟ
