Whatever you have in your pantry chili 🌢
After browsing numerous recipes online and realizing I don’t have all the ingredients needed, I decided to just wing it. This vegan chili hit the spot on this blustery cold Sunday!
1, 15oz can of each: Black beans, kidney beans, and chickpeas. I used @wholefoods 365 variety.
28oz diced tomatoes.
15oz can tomato πŸ… sauce.
4oz can green chillies.
1, diced red pepper.
2 tablespoons chili powder.
1/2 tablespoon of onion and garlic powder.
Salt and pepper to taste.
Crockpot on high for 2 hours.
Servings: 6 at [6 SP] per bowl.

Grabbing a quick lunch πŸ₯— with bae before the @onepeloton Tysons Corner Store launch! First time trying Sweet Leaf and not disappointed πŸ™ŒπŸΌ Next time I will get the tofu or nothing instead of falafel in my Toki Bowl 🀒...oh well. Happy Saturday!!

Skipped breakfast [lately haven’t been that hungry in the morning], worked a 1/2 day at work, and now prepping to host Friendsgiving. 🀞🏼 that the grocery stores won’t be too crazy.
I found out Trader Joe’s has a new dairy-free whipped cream that I oh so want!! Happy Friday!

🍴 @arrowheadmills buckwheat pancake mix. [4 SP] 🍴 @wholefoods flax and chia seed blend [2 SP]
🍴 @califiafarms vanilla almond milk [1 SP]
🍴Toppings are @purely_elizabeth peanut butter and chocolate sea salt granola [2 SP], bananas, and a little maple syrup [2 SP] πŸ™ŒπŸΌ

Skipped breakfast which meant feasting at lunch πŸ₯™πŸ€€ Couscous, spiralized carrots and brussel sprouts and veggie burger πŸ” from @traderjoeslist πŸ™ŒπŸΌ
One thing I didn’t expect to happen was my fiancΓ© joining me towards a plant-based diet. This past weekend we went to our wedding catering tasting and were given things to try. Meat πŸ₯© was presented and I had no interest.
The fiancΓ© decided to try it. For the rest of the evening he felt gross and sick 🀒 I never would’ve thought a little red meat would be an issue, especially for someone who ate it their entire life until this past August.
It’s amazing what a few months can do to change someone’s dietary preferences.

What I ate Wednesday πŸ” errrr, actually last Saturday but who is keeping track anyways 😜 Veggie burger with ALL the veggie toppings πŸ’•πŸ™ŒπŸΌ I really need to stop looking for this picture because now I don’t want the lunch I am going to have 😭 Struggle, am I right?! Happy Hump Day!

Chocolate chia seed pudding for this Tuesday. So glad it’s a short work week (is it Thursday yet?). I am in so much need of a mental break. Sometimes you just need to get away and hopefully this upcoming long weekend will do that for me πŸ™ŒπŸΌ

Grabbed this plant-based 🌱 smoothie while heading over to meet @balancedmissbailey for a little wedding πŸ‘°πŸ» related shopping 😁

Pumpkin BOOnana πŸ‘» pancakes for Halloween πŸŽƒ After my failed attempted at pancakes a few days ago I knew I had to try again!
πŸ•· 1 cup Quaker Oats
πŸŽƒ 1/2 cup pure pumpkin purΓ©e
πŸ•· 1/2 frozen banana 🍌
πŸŽƒ 1/2ish cup of almond milk
πŸ•· Big old dash of cinnamon (but pumpkin spice could work too)
πŸŽƒ 1/2 teaspoon baking powder
πŸ•· 1 teaspoon chia seeds
I mixed it all up in my ninja blender because lazy life is the best life. Topped with @wholefoods peanut πŸ₯œ butter, @purely_elizabeth pumpkin granola, maple 🍁 syrup, and bananas! Very thick pancakes but so delish πŸ€€πŸ€—πŸ˜‹

Bluueeeeeberry waffles for this gloomy Sunday 🌧 Used @arrowheadmills Organic Buckwheat mix with @wholefoods Vanilla Maple Chia & Flax ground seed blend, cinnamon and water πŸ’¦
Topped with @purely_elizabeth granola, banana 🍌 and a few extra blueberries. A little maple 🍁 syrup after the picture πŸ“Έ
Now I just need to figure out how to get these steps in for StepBet with all this rain 😀 In the home stretch and refuse to quit πŸ’ͺ🏼
