DAY 10: Happy Fryday ๐Ÿ˜๐Ÿ˜๐Ÿ˜๐ŸŸ currently preparing my liver because itโ€™s my friends birthday weekend and because unlimited mimosas ๐Ÿ™‚๐Ÿ™ƒ๐Ÿ™Œ๐Ÿฅ‚ wish me luck ๐Ÿ™‹๐Ÿปโ€โ™€๏ธ

DAY 9: ๐Ÿ”ฅTHE BEST ROASTED SWEET POTATOES EVER๐Ÿ”ฅ
For a long time I struggled to make sweet potato cubes that would be crisp on the outside and melt-in-your-mouth on the inside. That search has now ended๐Ÿ™Œ๐Ÿ™Œ๐Ÿ‘Œ make this ASAP. Easy and healthy (ish..๐Ÿ˜…) and delicious as helllll. What more could you ask for ๐Ÿคค๐Ÿ’•

Recipe:
- 1 sweet potato, peeled and cubed into less than 1 inch per side (small cubes is KEY! Maybe a tiny bit bigger than 1/2 inch cubes)
- 3 TBS olive oil
- 1/2 tsp sugar (creates caramelization)
- 2 tsp garlic salt (as much as you want, depends how salty you like it๐Ÿ˜‚)
-splash maple syrup
1. Preheat oven to 400. Line pan with parchment paper
2. Combine oil, salt, and sugar. Add sweet potato cubes and toss to combine
3. Arrange in 1 layer on pan. Bake for 40-45 minutes. Put into bowl and add maple syrup. Toss and enjoy (you may sprinkle some more garlic salt if youโ€™d like)

Vegan Zucchini Bread ๐Ÿฅ’๐Ÿž๐Ÿ’•

One of the first vegan foods I made when I did my 30 day vegan challenge back in 2015...one of the many reasons why I continue to be vegan โ˜บ๏ธโ˜บ๏ธ๐Ÿ’—๐Ÿ’—๐Ÿ’—

โค๏ธRECIPE:
โœจWETโœจ
- 5 TBS ground flax seed+1/2 cup warm water (whisk together and let it sit while you shred your zucchini)
- 1/3 cup coconut oil
- 2/3 cup applesauce
- 3/4 cup sugar
- 1/2 cup brown sugar
- 2 tsp vanilla extract
- 2.5 cup zucchini, grated (squeeze the juice out until fairly dry)

- 3 cup all-purpose flour (can sub 1 cup with whole wheat flour if youโ€™d like)
- 1 TBS baking powder
- 1/2 tsp baking soda
- 1 TBS cinnamon
- 1 tsp nutmeg
- 1/2 tsp salt
1. Preheat oven to 350 degrees and grease pans (I used mini loaf pan, but have tried with bundt pans/mini muffins/etc as well, all work!)
2. In bowl, mix together wet ingredients (preferably mix all the wet except zucchini first, and then add zucchini after mixing together)
3. In a separate bowl, mix dry ingredients thoroughly. Dump dry into wet and gently combine (donโ€™t overmix!). If you would like to add chopped walnuts/chocolate chips/etc add them now
4. Pour into prepared pans and bake until toothpick comes out clean (general times: mini muffins=12-17 min, mini loaf=25-35 min, large loaf/bundt pan=45-60 min)

Here is one of her signature vegan dishesโ€”rice noodles topped with sautรฉed bean sprouts and fried lemongrass tofu, drenched in a chopped red chilies+lime juice+soy sauce sauce (it is indeed very saucyyy๐Ÿ˜˜๐Ÿ˜‚๐Ÿ˜‚ ps I apologize for my lame 1AM humor๐Ÿ™ƒ)
