The Kitchen Imp  Seattle-based producer of organic, Fair Trade spices and blends. Sustainable for people and the planet.

Here are most of the component parts of our Tikka Masala. Almost 20 spices in all. Everything from amchur to ajwain to fenugreek leaf to fennel to, well, you get the gist. In the coming weeks I’ll post about individual spices, their taste properties, and what I like about them. Are there any spices you’d like to learn about?

Ahhhh. A rainy spring night calls for kabocha squash risotto with our Tuscan Seasoning. I reallllllly wanted bacon in this (in addition to leek, shallot, and garlic), but kid #2 is still eschewing red meat. Still, delicious. Don’t forget a little hit of acid (wine, vinegar) at the end when you make this. It brimgs the whole thing to life.

Chaat masala in the making: on the left there’s amchur (dried green mango powder), kala namak (black mineral salt), anardana (pomegranate powder), asafoetida (hing, an aromatic plant resin), cayenne. On the right, there’s black pepper, ajwain, fennel, coriander, cumin. Together, they make a tangy, spicy, aromatic blend that’s delectable sprinkled on melon, buttered flatbread, salad (green or whole grain), or roasted meats.

As a white woman who makes spice blends with origins in North Africa and the Indian subcontinent, I’m constantly delighted and constantly uncomfortable. My work is to help people feed themselves and each other and also to challenge white people to think about their role in the consumption of other cultures. Did you know that The Kitchen Imp makes tea? We keep trying to stop so we can focus solely on spices, but to no avail. We enjoy making them too much! Oh, and they taste delicious. This is our Pitta Tisane, redolent of cinnamon, coriander, cardamom, fennel, and rose. The hibiscus gives the beverage a bright, tart flavor that balances it out.

And we have marmalade. It’s delectable. Made from @imperfectproduce mandarins and lemons and The Kitchen Imp’s own vanilla beans. Yum. The process consumed more time than I thought it would, but making the marmalade was easy.
