There was a perfect ray of sunshine when I took a photo of this Toronto landmark two summers ago. Today, following the aftermath of events, the light doesn’t seem to shine as bright. But even in the darkest times, we’re hearing the stories of people who made a difference and make me proud to call this my hometown. Praying for all those affected by the tragedy today. 🙏🏻 #TorontoStrong ❤️

Finally, I’m shedding the parka, boots and gloves and dusting off the spring wardrobe... Soon, we’ll be seeing nature at work, witnessing our gardens blooming, picking our own fruit in nearby orchards. The week didn’t start off too well (I’ve been flat on my back for two days and the nasty 90km winds tore down my back fence today), but hey, these are the things that give you perspective and I’m grateful I now have my strength back and my kitchen is intact. 😬 So my thinking tonight? If I can taste the flavours of Tuscany, maybe I can feel like I’m under the Tuscan sun with every bite of this lemon, thyme and olive roasted chicken...OK, back to reality. After this weekend’s Easter feasts, I only want to eat greens today. And this dish is always a winner with the entire fam jam. Steamed green beans, drained, then sautéed with olive oil, toasted sesame seeds and garlic. TIP: DO toast the sesame seeds because they add so much more flavour. Simply add seeds to a non-stick skillet on med-high heat and stir until lightly browned. Keep an eye on them — they brown quickly. 💚💚💚💚💚💚💚 💚

This lemon and fennel Easter bread became an annual baking tradition only after I married my husband, a recipe in his family made for generations (see saved story for steps). 🐣 It means more to me than just keeping a tradition alive or having a delicious treat after dinner, but rather it’s a reminder of the importance of breaking bread at the table, being surrounded by family and making sacrifices for our loved ones. 💐 Wishing all of you a blessed Easter (and Passover for those who celebrate) weekend. If you asked me, “What’s the first veggie you think about when I say spring?” I’d say asparagus. Ask me how I like them and I’d say in a frittata or in a risotto. Well, I put the two together, mostly cause I had an abundance of cooked rice and eggs in the fridge. 😜 But also cause they work great together! And like my mamma always does, I combined cooked rice and eggs with steamed asparagus, along with a smattering of ricotta and Parmigiano, a handful of herbs (mint is amazing in this!), gave each spoonful a quick sear in a pan and ate them like popcorn. Those Italian mammas come up with the best inventions! Now if only they can do something about this “spring” weather! 💐💐💐💐
