So I started to make my own almond milk and cashew yoghurt on the regular. I just can't bring myself to not use the almond pulp so I turned that into cashew & almond meal cheese with herbs. That cheese became the filling of a savory Turkish pastry (bรถrek) served along with cashew yoghurt tatziki, lentil/bulgur kรถfte, and of course the baklava. This whole spread takes me to a very happy place ๐Ÿ˜‹

Vegan baklava is happening today!! Just listen to that promising sizzle. The trick is to have the syrup at room temperature and pour it over the hot, just out of oven baklava.
I am actually just starting to work on developing a good vegan version. The final recipe will of course be shared but in the meantime, I am just going to enjoy the fruits of my experiments ;)

Vegan bruschetta platter with cream cheese, vegan smoked salmon (see previous post), balsamic marinated tomatoes, avocado slices and homemade kimchi! Snacking at its best and I am thinking this would be just perfect for entertaining.

Red bell peppers, peeled and marinated, with a flavor and texture reminiscent of smoked salmon. Of course it is not a 1 to 1 imitation of salmon that would pass as one in blind taste tests, thatโ€™s not the intention. But rather it functions as one as a wonderful toast topping, sushi or sashimi component, or a stand alone appetizer. The full recipe on the blog now (link in bio).

Vegan sashimi platter, with homemade kimchi, smoked & marinated red pepper, marinated cherry tomatoes, cucumbers, radishes and greens. A lot of experimentation with home fermenting and marination built up to this and I am so excited about it. The depth of flavors that can be infused into veggies over time is amazing. The red pepper "smoked salmon" video recipe is still in progress but I will post it soon.

Falafel is a superstar in plant-based cooking, but this seemingly simple dish is kind of hard to nail down in terms of texture.ย One simple trick to step up your falafel game, and to say goodbye to the mushiness, is to use dry chickpeas instead of canned. Canned chickpeas is definitely practical but it just doesnโ€™t deliver the same flavor and texture.ย Soaked 24 hours in water, the dry chickpeas hydrate and soften. It is not even necessary to boil them, so it is not an added effort, you just need to decide a day before that you will be making falafels. The rest of the recipe is remarkably simple, and it is on the blog now.

My newest dessert adventure: chocolate cake roll with vegan cheesecake filling. This was incredibly delicious but I wish I didn't make the cheesecake filling also chocolate flavored ๐Ÿ˜‚ A vanilla filling would give some contrast and make this little treat look as good as it tastes. Oh well, this just gives me an excuse to bake another one ๐Ÿ˜‹
