The Dalmore’s Master Distiller Richard Paterson is relentless in his search for the finest casks in which to mature our unique new make spirit. The revered 25 year old for example is matured initially in American white oak, before moving to a mix of rare hand-sourced 25 year old sweet Palomino Fino sherry butts and 1980 first fill bourbon casks. These exceptional spirits are then expertly married together in bourbon barrels before being transferred for the final time into Tawny Port pipes from Portugal, for a totally unrivalled finish.

To honour his contribution to the world of whisky, The Dalmore have created the champagne-finished 50 years old. With a sweet and fruity aroma, a strong chocolate and coffee palate and finish of black morello cherries, crushed almonds and soft liquorice – the 50 is the epitome of artistry.

Our whisky is matured in the world’s finest casks, including American white oak ex-bourbon casks and exclusive aged sherry casks from Gonzalez Byass.
