SALMON, BROCCOLINI AND POTATOES A super easy delicious meal that only looks fancy. I roasted everything and simply used Himalayan pink salt (it adds so much flavor!) and freshly ground black pepper for seasoning. TROPICAL MANGO MUFFINS I just made a batch my daughter’s favorite gluten-free, sugar-free muffins. You can use fresh or frozen mango. Sometimes I add dried cranberries too. 1/4 cup coconut flour
1/4 cup unsweetened flaked coconut
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 beaten eggs
1/2 cup orange juice
1/3 cup honey
2 ounces canola oil
1 teaspoon vanilla extract
1 cup chopped mango
Preheat oven to 350˚ F. Line a muffin tin with paper inserts.
Mix the almond flour, coconut flour, coconut, baking powder, baking soda, and salt in a large bowl.
Mix the eggs, orange juice, honey, canola oil, and vanilla extract in a medium bowl.
Stir the wet ingredients into the dry ingredients until thoroughly mixed.
Gently fold in the cut up mango. Spoon the batter into individual muffin cups. Bake 20 - 25 minutes or until golden brown. .

VEGAN VEGGIE DELIGHT this recipe was inspired by a recipe for shepherds pie. I used soy protein veggie crumbles instead of the beef and substituted spaghetti squash instead of sweet potato❤️ visit my website for more delicious recipes that are easy to prepare. The link is in my bio🎨ingredients: spaghetti squash, 1red onion, 1red bell pepper, 1 Green bell pepper, 6 ounces MorningStar Farms grillers crumbles, sriracha sauce, salt and pepper, parsley for garnish. Directions: roast the spaghetti squash. Saute the red onion and bell peppers in a little olive oil. Remove from skillet and sauté the veggie crumbles until browned. Scoop out the flesh from the spaghetti squash and plate. Cauliflower crust:
1 head cauliflower
2 eggs
¼ teaspoon salt
freshly ground black pepper to taste
Roasted vegetable toppings:
1 eggplant sliced
2 zucchini, sliced
1 pint grape tomatoes (I used heirloom), halved
2 cloves garlic, minced
olive oil
salt and pepper to taste
Pizza:
2 - 4 tablespoons marinara sauce
¼ cup shredded mozzarella cheese (optional)
Cauliflower crust:
Preheat the oven to 400˚ F.
Cut the cauliflower into florets. Using a food processor, pulse the cauliflower in batches.
Place the cauliflower (about 2 cups) in a microwave safe dish and microwave for about 8 to 10 minutes. Use a clean dish towel to remove excess water.
Mix the cauliflower with the eggs, salt and pepper. Line a baking sheet with parchment paper and shape the cauliflower into a circle. Bake for 20 minutes.
Roasted vegetable toppings:
Line a rimmed baking sheet with parchment paper.
Brush the sliced eggplant and zucchini with olive oil and garlic and season with salt and pepper.
Roast for 15 minutes at 400, turning once.
Toss the tomatoes with olive oil, salt and pepper and roast for 15 minutes at 400.
Assembling the pizza:
Place a thin layer of marinara sauce over the cauliflower crust. Place the vegetables on top. CHICKEN CACCIATORE

1 chicken, cut in 1/8ths, trimmed of excess fat (about 3 pounds), seasoned with salt and pepper
½ cup flour for dredging chicken
2 tablespoons olive oil
1 medium onion, halved and then sliced
1 red bell pepper, cut into strips
4 cloves minced garlic
1 (28-ounce) can San Marzano whole tomatoes
¾ cup white wine
2 tablespoons capers, drained
½ cup sliced pitted olives
1 teaspoon dried oregano
1 teaspoon dried basil
Dredge the chicken in the flour.
Heat the olive oil in a large Dutch oven over medium heat. In batches, brown the chicken pieces and set aside.
In the same Dutch oven, sauté the onions, peppers, and garlic until the vegetables soften. Add the canned tomatoes and wine to the pot. Break apart the tomatoes with a spoon. Add the capers, olives, oregano and basil. Bring to a boil and reduce the heat to a simmer.
Return the chicken to the pan. Simmer for 1 hour, covered.

1 1/2 tablespoons olive oil
1 yellow onion, coarsely chopped
1 lb. carrots, diced
2 large sweet potatoes
1/2 tablespoon salt
1/8 teaspoon pepper
2 cloves garlic, minced
1 teaspoon grated ginger
4 cups vegetable broth
2 tablespoons chopped fresh parsley
Microwave the acorn squash until softened.
Heat the olive oil in a stock pot over medium heat. Add the onions and carrots and saute for 6-8 minutes. Add the garlic, ginger, salt and pepper and continue to saute for an additional 5 minutes.
Scoop out the flesh of the acorn squash and add to the stock pot. Add the vegetable broth.
Cook for 30 minutes.
Puree the soup using an immersion blender. Garnish with parsley and enjoy!

ONE-PAN MAPLE GLAZED CHICKEN WITH ROAST VEGETABLES
A delicious, simple meal cooked on a sheet pan, that tastes fancy and is a snap to clean up!
I cooked the chicken first and then added the veggies to the same pan. I used a large stoneware pan, but you can use a baking sheet too. ❤️Recipe below. 2 tablespoons olive oil
2 tablespoons maple syrup
1 tablespoon balsamic vinegar
1 lb. rainbow carrots, peeled and cut into chunks
1 lb. Brussels sprouts, ends trimmed and halved
Preheat the oven to 400 degrees.
Mix the olive oil, maple syrup, and balsamic vinegar together. Place the chicken on the baking sheet and brush the chicken with 1/2 of the maple balsamic glaze.
Bake uncovered for 30 minutes.
Toss the vegetables with the remaining glaze and add to the sheet pan with the chicken.
Cook an additional 20 minutes until the chicken is done and the vegetables are tender,
