Sweet potato toast bruschetta
1 large sweet potato, cut into 5mm slices
2 @australiantrusstomatoes, chopped
1 small red onion, diced
1 Clove garlic
Edible flowers (optional)
Bake sweet potato slices in an 180*C oven for approximately 25mins, until cooked through (and a little crispy) - you could also just pop them in your toaster for a few cycles, but I broke the toaster at work doing that, so tend to avoid it now 😂
While they're cooking, mix the tomato and onion together in a bowl, with a dash of Balsamic vinegar, and let sit so the flavours can combine.
Once sweet potato is cooked, remove from oven and rub them with some cut garlic.
Top the toasts with the tomato mixture, then drizzle with some more Balsamic vinegar, and tip with micro herbs (or regular herbs, like fresh basil, if that's what you've got on hand) and edible flowers if you're using them.
