We’ve been partnered with Double R Ranch for nearly a decade now. They raise much of our Black Angus beef and all of our American Wagyu beef. Getting to know the Ranchers personally and see them do their thing is always a special opportunity. At this time of the year the cattle are high up in the mountains where the grass is still green. Soon they’ll begin the journey down into the valley for the winter.

We are happy to announce we will be offering @pasturebird Pastured Chickens on special order. Please contact our shops for details. Pasturebird is a local farm based in Temecula, California. They raise chickens outside, on pasture 24/7 where they forage for grasses, bugs, seeds, and worms in the fresh air and sunshine, and don't ever receive antibiotics or drugs. The taste is truly old-school, the way chicken was meant to be!

Marbling is important in pork too. Those feathers of fat render during cooking and create flavor. We’ve been offering Salmon Creek Farms pork since we began, we haven’t found any better.

This is Outside Skirt steak. Did you know there were two kinds of skirt, inside and outside? The inferior inside skirt (and cheaper) is often sold in grocery stores and labeled simply as skirt steak, so always ask your butcher. If they don’t know the answer, don’t buy it.

We recently visited @pasturebird and were very impressed with their operation. If you’re looking for truly pasture raised birds they are operating with a genuine passion for getting it all right, and for the right reasons. Their birds move slightly each day to fresh pasture, something rarely done, they have adequate shade and sun, and they share pasture with other animals. We’re working on getting them into our stores but you can get your hands on them now through their online store. Oh, we got to try some of their chicken while we were there and it also happens to be really good... Check out their IG!... very cool what they’re doing.

Heady Topper is a double India Pale Ale brewed by The Alchemist in Stowe, Vermont. It is unfiltered and contains 8% ABV, with hints of citrus flavors. “Heady” was rated the fifth best beer in the world by Beer Advocate, and has been described as "a complex web of genius." Focal Banger is more hop-forward than Heady. While Heady has a more complex hop profile and a stronger malt backbone, Focal is all about the Citra and Mosaic hops. At 7% and with all pale malt, the tropical fruit in the Focal is delicious. #craftbeer
