I’m a fan of “quality over quantity” when it comes to just about everything – food, clothing, skincare, furniture, and the materials and tools I bring to the kitchen. Just as I carefully choose my ingredients to be as nutritious and socially-responsible as possible – farm-fresh eggs from happy chickens, local dairy from grass-grazing cows, organic artisanal maple syrup, and in-season berries from small farms – I also choose non-toxic cookware made from natural materials. For breakfast today, I used my Lagostina to whip up this gluten-free dutch baby made with sweet rice, oat, and millet flours, and topped it with dollops of blueberry chia jam, Greek yogurt, fresh berries, and a pour of maple syrup.
