For this cook I had Thai marinated flank steak that I grilled direct on my @biggreenegg MiniMax. Sliced this beauty up using my favorite @route83knives chef’s knife. And served over salad (you know... because it’s green).

After several iterations the smaller more traditional pork belly pieces were the way to go. Prepping for the event at @mesacollabkitchen tomorrow night with these little bites of deliciousness.

Cubed the pork belly to 1x1 pieces. Trimmed the extra fat off of them. Rubbed with a slather of mustard then @meatchurch Holy Gospel. Smoked for 2 hours at 275° until they measured 195° internal. Covered them with my Korean BBQ sauce, butter and honey. Back in to the @biggreenegg XL for another hour while the sauce reduces. After they cool, they will be vacuumed sealed then warmed with a sous vide bath tomorrow night before serving.

Food morning people! Rise and shine (assuming you can refresh your feed... sorry couldn’t resist) to this #tbt classic video showing one of my favorite game day snacks the “Converters”. Why name them Converters you ask?! Well, Mrs. Buddha said these are so good it will convert anyone that doesn’t like mushrooms to someone who does. Bold words... but worth a try right?!

White mushroom caps stuffed with a mix of cream cheese, shredded cheddar, diced jalapeño, and turkey sausage crumbles. Wrapped in a slice of bacon and covered in @meatchurch Honey Bacon BBQ rub. Cooked indirect in my @biggreenegg large at 275° for about 30 minutes.

Food morning people! Rise and shine to this BTS video showing my 1.0 version of BBQ dumplings. I say 1.0 as these will most certainly evolve over time and want to make sure we share the journey together.

Started with leftover brisket that I chopped up with this amazing @route83knives Cleaver. Added a generous amount of pimento cheese. Mixed well and placed a dollop in a wonton wrapper. Got that classic “pot sticker” by warming oil in a pan first, adding the dumplings, then 1/2 cup of water, covering, and letting sit undisturbed for 10 minutes. Perfect! Served with chipotle BBQ sauce... these were pretty good.

Dumplings are so good. I could seriously eat my weight in them. Homemade dumplings are even better. Oddly enough, I have never made dumplings so this is a first for me. For the longest time I have wanted to fuse BBQ with Asian dumplings. Today was my very first step in that direction.

This first batch used some leftover brisket from this last weekend mixed with pimento cheese. Pan fried them to get that crisp and sticky skin. Paired with a Chipotle BBQ sauce these were pretty darn good.

I am now on a quest to master these little guys. I will create the world’s best BBQ stuffed dumplings or die trying. Well, maybe not the world... maybe just here in Louisville. And I can just skip the dying part altogether 😏

Food morning people! Rise and shine to a look in to yesterday’s Teres Major cook. Thank you to @chilipepperranch and @masons_market for the nice cut of beef. Folks have been asking me about the bourbon cream sauce I made with this. Well, here you go!

For the steak: I had fun using my @biggreenegg large with the EGGspander for this cook. Using multiple heat zones is key to getting great results. Rubbed the steak with salt and pepper then roasted indirect at 500° until internal temperature measured 120° (using the @biggreenegg instant read thermometer). Grilled the steak direct on the cast iron grate to get a nice sear (couple of minutes per side).

For the sauce: I used a cast iron pan on the top rack of the EGGspander. Once heated I added olive oil and mushrooms. Once they were nice and brown I added 2 minced garlic cloves and let sauté for a minute until fragrant. Now the fun part... added 3/4 cup of @buffalotrace bourbon and lit to burn off alcohol. Then 3/4 of heavy cream and 1 Tbsp of soy sauce. Let that reduce by half (10 minutes or so).
