got food poisoning from dinner last night (!!😢😢) so while i’m feeling a little better, food isn’t sounding so good right now 🙈 meanwhile, i’ll leave you with these grain free peanut butter coconut banana bread bars i shared on my story (recipe below & stored in my “cooking demo” highlights!) 🤩 soaking up my last few days in san diego before i move back to boulder - happy monday friends! 👋🏻 pb coconut banana bread bars:
2 ripe bananas, mashed
1/4 cup honey (i used @wedderspoonofficial honey - omit if going for less sugar)
1/4 cup creamy, all natural PB
heaping 1/4 cup coconut flour
1 tsp baking powder
dash of cinnamon, sea salt & vanilla extract
1/2 cup dried coconut
pre heat your oven to 375. mix the eggs, vanilla, bananas, honey, and peanut butter. fold in the coconut flour, baking powder, cinnamon & sea salt. once mixed, add in the coconut shreds.
spray an 8x8 pan with cooking oil & pour in the batter. bake for 20 minutes and let cool for 1 hour. cut into 9-12 squares & enjoy!
