Swiss chard is one of my all time favorite veggies and one of the most impressive, in all it's super nutrient denseness. Rich in vitamins A , K and C, as well as fiber, chard also has a fair amount of folic acid, along with an impressive amount of magnesium, calcium and potassium. It's also loaded with phytonutrients and antioxidants which are powerful for fighting free radical damage, inflammation and disease development. Pro-tip: I read recently that tearing the leaves of your left greens can also up their antioxidant levels!
Since sprayed chemicals tend to remain on the leaves of veggies, even when washed, it is extra important to choose organic with your leafy greens.
Also psssst....eat those vibrant stems, you guys, they are super tasty, especially sautéed in some bacon grease with a little garlic. 😋
