There are more than 50 types of thick soup (āsh) in Iranian cooking, ash reshteh being one of the more popular types.👌🏻👌🏻😎Some other well known āsh include ash-e anar (pomegranate stew), ash-e-jo (barley stew), ash-e doogh, ash-e sak (spinach stew), ash-e torsh (beet/pickle stew).

Ghormeh Sabzi is an Iranian herb stew. It is a very popular dish in Iran(remember)👉🏻 It is often said to be the Iranian national dish. The history of Ghormeh sabzi dates back at least 500 to 2,000 years.thats along time🤔🤔
The main ingredients are a mixture of sauteed herbs, consisting mainly of parsley, leeks or green onions, coriander, seasoned with the key spice of dried fenugreek leaves. The herb mixture has many variations; any dark bitter green can be used (kale, mustard greens, turnip greens, etc., all work, although none are part of the original recipe).
This mixture is cooked with kidney beans or yellow split-peas, yellow or red onions, black lime (pierced dried limu-Omani Persian lime), and turmeric-seasoned lamb or beef. The dish is then served with chelow (Persian parboiled and steamed rice) or over tahdig.
Now the hint of gheymeh is an Iranian stew (khoresh) consisting of meat, tomatoes🍅🍅split peas, onion and dried lime🍈🍈The stew is garnished with 🍆🍆eggplants and/or French fries and usually served with rice.Gheymeh is handed out at religious ceremonies as a donation to Iranians all over the country.

This is the stew that you would see at most traditional dinner parties. Khohresht e Bademjan tastes great when it has some tartness to it. This could be accomplished by either of the following ingredients: Fresh lemon juice, limoo amani (dried Persian lime), abghooreh (sour grape juice), or ghooreh (sour grapes).
The spectacular stew is almost always served with rice.

Koofteh Tabrizi is a super meatball stuffed😎😎 with dried fruits and berries, also a variety of nuts. There are some other interesting fillings for this very traditional Azeri🤔😍🤔 dish that are worth mentioning. One very common item is a peeled hard boiled egg that is placed inside the koofteh along with nuts and dried fruit. The yellow cooked yolk surrounded by a ring of white makes a pretty presentation when you cut into the koofteh, so you might give this a try if you like. I personally prefer not to, simply because I think it takes up the space that I can fill with my favorite dried fruits and nuts that are more flavorful.

Its ingredients consist of wheat sprout, flour, egg yolks, rose water, sugar, butter or vegetable oil, saffron, cardamom, and slivers of almond and pistachio. 😎
It is made by boiling a mixture of water, sugar, milk, and cornflour until it becomes solid. Saffron is used for flavoring. Ghee is used to prevent it from sticking to the pan. Almonds, pistachios and cardamom seeds are placed atop of the sohan!🤗🤗🤗🤗🤗
One of the main hubs for Sohan is The Holy city of Qom.

First let’s talk about haleem🤔😎🤔Haleem is made of wheat, barley, meat (usually minced meat of beef or mutton or chicken), lentils and spices, sometimes rice is also used. This dish is slow cooked for seven to eight hours, which results in a paste-like consistency, blending the flavors of spices, meat, barley and wheat.
