Eggplant Charlotteâ €

INGREDIENTS:â €
1 eggplant, sliced lengthwise 1/4-inch thickâ €
2 roma tomatoes, sliced into 1/4-inch roundsâ €
1 yellow zucchini, sliced into 1/4-inch roundsâ €
1 green zucchini, sliced into 1/4-inch roundsâ €
1/4 cup soft goat cheeseâ €
Olive oilâ €
Saltâ €
Pepperâ €
STEPS:â €
Preheat oven to 375 degrees. Drizzle a parchment-lined baking sheet with olive oil and season with salt and pepper. Place the sliced vegetables on the sheet. Drizzle with more olive oil and season with salt and pepper. Roast for 10 minutes until softened but not browned.â €
Grease 4, 8-ounce ramekins. Line with 3 to 4 pieces of eggplant. Spread 1 teaspoon of goat cheese, then layer one slice each of tomato, yellow zucchini and green zucchini. Spread another teaspoon of goat cheese and another layer of tomato, yellow and green zucchini.â €
Drape overlaying eggplant pieces over the charlotte and bake 15 to 20 minutes. Flip the ramekin over on a plate and allow to cool for at least 30 minutes for the layers to set.â €
Can be served warm or cold.â €

Cedar Wrapped Salmonâ €

INGREDIENTS:â €
4 cedar wrapsâ €
4, 6 ounce salmon filletsâ €
1 small zucchini, cut into thin roundsâ €
Salt and pepperâ €
ZUCCHINI PESTO:â €
2 small zucchinis, gratedâ €
1/2 cup packed basil leavesâ €
1/4 cup Parmesanâ €
1 garlic cloveâ €
1/2 lemon, juicedâ €
2 tablespoons pine nutsâ €
Salt and pepperâ €
2 to 4 tablespoons olive oilâ €
STEPS:â €
For the salmon - Preheat oven to 400 degrees. Soak cedar wraps in water for at least 5 minutes. Next, place a few zucchini rounds on the soaked cedar wrap, followed by the salmon. (Make sure the salmon and veggies are going in the same direction as the wood grain. This will allow the wrap to close properly.) Coat the salmon with a few tablespoons of pesto. Close the wrap over the salmon and secure with two strands of butcher twine. Trim excess string.â €
Place wrapped salmon on a sheet tray and bake for 15 to 20 minutes. Carefully cut twine and peel back cedar wraps. Serve with rice or noodles covered in zucchini pesto. â €
For the zucchini pesto - Place the grated zucchini in a clean dish towel or cheesecloth and squeeze out moisture until zucchini is dry. This should yield about 1 cup grated zucchini.â €
In a food processor, add all pesto ingredients except for the olive oil. Pulse until well combined. Leaving the food processor on, slowly drizzle in olive oil until desired consistency.â €

Âľ cup softened butterâ €
1 cup white sugarâ €
2 eggsâ €
1 tsp vanilla extractâ €
2 ½ cups all-purpose flour⠀
1 tsp baking powderâ €
1 tsp saltâ €
1 tsp each of blue, purple, pink, green and yellow food gel (I use Americolor food gel)â €
STEPS:â €
In a large bowl, cream together butter and sugar until smooth. Beat in eggs and vanilla. Stir in the flour, baking powder, and salt. Cover, and chill dough for at least one hour (or overnight).â €
Preheat oven to 400 degrees F (200 degrees Câ €
Separate batter into 5 even pieces. Colour each one with each different colour. Roll out about a tablespoon of each colour into a log about 20 cm in length. Place each colour next to each other and carefully twist as demonstrated. Roll around in a snail shape and place on a baking sheet lined with baking paper. Carefully place a bake safe lollipop stick behind the cookie and press the cookie into the stick.â €
Bake 6 to 8 minutes in preheated oven. Cool completely before serving.â €

Balsamic vinegar reduction:â €
1 cup balsamic vinegarâ €
1/3 cup honeyâ €
STEPS:â €
For the balsamic vinegar reduction:â €
In a small skillet, combine vinegar and honey and bring to a boil. Reduce heat and simmer until liquid has reduced and thickened. Set aside to cool.â €
For the caprese:â €
Halve four peaches and wrap each half in a bacon strip. In a cast-iron pan, cook bacon-wrapped peaches until bacon is cooked and peaches are tender. Set aside to cool to room temperature while you assemble the salad.â €
For the salad, thinly slice the tomatoes, the four remaining peaches and the mozzarella. Layer all the peaches, mozzarella and tomatoes in alternating order, then top liberally with balsamic reduction. Season with salt and pepper to taste. Serve immediately.â €

STEPS:â €
Preheat oven to 350 degrees, and spray the bottoms and sides of six 5-inch pie pans with nonstick spray.â €
In a medium bowl, whip the egg whites.â €
In another medium bowl, combine flour, salt and baking soda. Stir in the milk.â €
In a large bowl, cream together the butter, sugar and yolks. Mix in flour mixture, then fold in the whites, followed by the vanilla. Divide batter between the prepared tins. Divide blueberries between the tins to cover the tops of the custards. Bake for 20 minutes or until golden brown.â €
For the ricotta:â €
Add ricotta and milk to a bowl. Whip with a whisk until smooth. Add lemon zest and juice and vanilla. Spoon onto pies and serve warm.â €

1 box macaroni and cheeseâ €
2 tablespoons butterâ €
1/4 cup half-and-halfâ €
1/2 cup shredded cheddar cheeseâ €
1 1/2 cups flourâ €
1/2 teaspoon saltâ €
1/4 teaspoon pepperâ €
1/4 teaspoon cayenne (optional)â €
2 eggs, beaten wellâ €
1 (8 1/2 ounce) bag jalapeño-flavored potato chips, crushed⠀
2 cups vegetable oilâ €
1/2 cup mayonnaiseâ €
1/3 cup sour creamâ €
1/4 cup buttermilkâ €
1/2 teaspoon granulated garlicâ €
1 tablespoon chivesâ €
1 tablespoon dillâ €
STEPS:â €
In a 2-quart saucepan over high heat, heat 6 cups of water to a boil. Add macaroni and cook, stirring occasionally, for 7 to 8 minutes.â €
Drain and place pasta back into saucepan. Add butter, sauce powder, half-and-half and shredded cheese, stirring until combined and cheese has melted.â €
Pour into a parchment-lined rectangular baking dish and press flat until about 1/2-inch thick. Chill 30 minutes to overnight.â €
Using a knife or pizza cutter, cut 1/3-inch by 3-inch batons out of the chilled macaroni.â €
In a small dish, add flour mixed with salt, pepper and cayenne. In a separate shallow dish, add the beaten eggs. In a third dish, add the crushed jalapeño chips.⠀
Dip a mac 'n' cheese baton into the flour until lightly coated, then dip into egg, then coat well with crushed chips. If needed, dip again in the egg, then in the chips. Repeat with remaining macaroni batons.â €
In a 2-quart saucepan, heat 2 cups vegetable oil over medium heat to 350 degrees.â €
In batches, taking care not to overcrowd the pan, fry the coated macaroni until golden brown. Drain on a paper towel-lined plate.â €
To make ranch dip: Stir ingredients together in a mixing bowl and allow to chill for 30 minutes.â €
Serve fries alongside ranch dressing.â €
