I literally spent the whole of Sunday in the kitchen and I LOVED it!! It's definitely my happy place (that and the beach!). I picked up some pak choi from the farmers market on Saturday and got it in my head that I was going to try and make some kind of noodle dish. I wanted hearty and spicy and after some recipe research I decided on a chilli chicken ramen, from scratch! I rarely use just one recipe, so I read a few and decided how I'd like to do it. I'd also never made stock from scratch... it's so easy, and tasty! Anyway, here is my first attempt and I'm pretty pleased with it. Even the hubby loved it. 👍🏼
I also love that once you've made the stock and chicken you've then got dinner sorted for a few days. And it's full of goodness. Win win! What's your favourite meal to cook once it's starts getting colder?
