First Blueberry Corn Salad of the season!!! It’s everyone’s favorite and perfect for @weightwatchers Freestyle and all healthy eaters. I paired it with grilled salmon and arugula tomato salad. This whole plate has 2 @weightwatchers freestyle points (1 for the dressing and one for the sesame seeds on the salmon). I’m so excited to see family and friends over the long weekend. To make the Blueberry Corn Salad take the kernels off 6 fresh ears of corn, mix with 2 cups fresh blueberries,
1/4 cup diced red onion, 1/4 cup cilantro (or parsley for those cilantro haters), and a seeded and chopped jalapeño. For the dressing mix 3 Tablespoons fresh lime juice, 2 Tablespoons Olive oil, 1 Tablespoon honey and 1/2 teaspoon ground cumin (I prefer roasted cumin if you have it). Pour dressing over salad and stir to combine.
