Tabbouleh is a middle eastern salad, typically made with loads of the key ingredient -parsley, as well as mint, bulgar wheat, red onion, cucumbers and tomatos that is dressed with a light olive oil and lemon juice dressing! I added a bit of coriander to mine as well as some pomegranates. .
Served alongside zaatar roasted baby brinjals with mint and tahini yoghurt dressing!

1/2 head of cauliflower -Grated or chopped in a food processor to resemble rice/crumbs... not too fine Add to this
A large bunch of fresh flat leaf parsley finely chopped
A Medium bunch of fresh mint also finely chopped (I love mint so I add in extra)
Fresh Coriander finely chopped (optional)
1/4 cucumber deseeded and finely diced
1/4 tomato deseeded and cut into small cubes
1/4 of a red onion diced
A handful of pomegranates .
Toss it all together gently! .
Add a couple of tablespoons of olive oil, Himalayan salt and the juice of half a lemon, give it a good stir and taste for seasoning. .
