Get 3 boiled eggs
1 whole avocado
A couple of mini Roma tomatoes!
Add salt, black pepper and drizzle a little bit of olive oil to all the diced tomatoes, avocado and boiled eggs. Enjoy!!

That "I Urgently Need Some Foofoo Vegetarian Food In My Life" Meal - Done

I love travelling. I do. But but, after 10 days of eating "mild" European & Scandinavian food, I was craving for something spicy! I reaaallllly missed home food & especially spicy vegetarian food!! I needed to make something to satisfy my craving, so I did

Clockwise :
1. That Patal Shevachi Bhaji/ Thin Gramflour Crisps Curry
I tempered oil with ginger-garlic, curry leaves, onions & tomatoes. Once pulpy, I added in fresh coriander & only a super foofoo kanda lassun masala/onion - garlic spice mix, some water & allowed to simmer

It turned out so so spicy that just to balance, I added in coconut milk. This is NOT traditionally done - So all the purists look away & forever hold your peace ✌️😁
I added in store bought shev/deep fried Gramflour crispy snacks just before serving

2. That Store bought shev
I like to serve most of it on the side so that one gets a bite whilst eating. If put it all in the curry, they tend to get really mushy

3. That Vangi Batatechi bhaji/Eggplant & Potatoes
I made a coarse paste out of fresh coconut, roasted sesame seeds & roasted peanuts using no water
I tempered oil with ginger-garlic pastes, curry leaves, onions & tomatoes & once pulpy, I added in turmeric powder, cumin powder, coriander powder, red chilli powder & Kala masala/ garam masala powder for that extra kick
I cooked the potatoes in this till half done, added in diced green eggplants along with water & once almost cooked, added in the coarse paste along with fresh coriander & cooked till done

4. That Salad : Onions & Lime
