When your work lunch turns out better than you expected 😋😍🙌🏾.
. I had actually planned on buying lunch today because I didn’t have anything prepped already and I just wasn’t in the mood to prepare anything after dinner. Then I realized I had a can of @safecatchfoods tuna. So I quickly mixed that with a bit of @sirkensingtons avocado mayo, some EVOO, bread and butter pickles and dried dill. I boiled my egg the night before as well. This took all of 10 mins tops. .
. At lunchtime, I slathered the tuna on half of a @udisglutenfree toasted hamburger bun and topped it with some watercress and the egg. So good! .
. Sometimes pulling together the scraps that you have can come together in the most beautiful and fulfilling way. Don’t count out your scraps. And use what you have. This reminds me so much of how Christ fed the 5,000+ with only 2 small fish and 5 small loaves. With faith you can make it work. .
. New snack review:
. This was my first trying seaweed snacks. I opted for the regular roasted sea salt flavor since the other versions had garlic and onion in them (flare triggers). And to much of my surprise, I didn’t like them. 😟 I just knew that I would like these because “everybody else does”. HA!! Boy was I wrong. I kept tasting it and trying to make myself enjoy it, but it was constant torture. It just left me craving sushi to be honest. I’m going to try to blend them up in my next smoothie to see how that works. . I really want to add more sea vegetables in my diet, but I don’t know if I can do that if they all taste like the bottom of the ocean floor. 🤭😑
Anyhow, stay tuned. 😜 (I’m not a fan of long captions, so my apologies for the long read).
