INGREDIENTS LIST FOR THE HONEY GARLIC BUTTER ROASTED CARROTS:

2 pounds carrots, rinsed;
5 tablespoons butter;
4 garlic cloves, minced;
2 tablespoons honey;
1/4 teaspoon salt;
1/4 teaspoon fresh ground pepper;
Chopped fresh parsley, for garnish.

Directions:

1#ย Preheat your oven to 425ยฐF (220ยฐC). Lightly oilย a baking sheet and set aside. Quarter theย carrots lengthwise, keep them attached nearย the base of the stem. This will help them cook faster, plus itโ€™s cute!

2# Melt butter over medium-heat in a saucepan. Add garlic and cook for 3 minutes, or until lightly browned, stirring very frequently.ย Make sure not to burn the garlic. Remove from heat and stir in honey and whisk toย combine.

3# Arrange carrots on the prepared baking sheet and brush them with the honey garlic butter sauce. Toss carrots to coat them evenly and arrange in one layer. Sprinkle with salt and pepper and bake for 15ย minutes, or until carrots are tender.

4# Remove from oven and transfer to a serving plate. Adjust seasoning if necessary and serve, garnished with fresh chopped parsley. Enjoy!

INGREDIENTS LIST FOR THE ONE PAN CHICKEN AND POTATOES:

2 tablespoonsย butter;
1 pound chicken thighs, bone-in, skin-on;
1 teaspoon paprika;
2ย teaspoonย Italian seasoning (thyme, oregano, basil โ€“ combined);
2 cups baby red potatoes, washed and quartered;
4ย garlic cloves, minced;
2ย medium tomatoes, diced;
1 cup freshย spinach;
1 teaspoon crushed red pepper flakes;
1 cup (240ml) chicken stock;
1 cup (240ml)ย half and half (half cream mixed with half milk, for a lighter cream);
1 cup Parmesan cheese,ย grated;
Salt and pepper.

Directions:

1#ย Season chicken thighs with 1 teaspoon Italian seasoning, salt and pepper, to taste.

2# Melt 1ย tablespoon butter in a large skillet or pot over medium high heat. Add chicken, skin-side down, and sear both sides until golden brown, about 4-5ย minutes per side; drain excess fat and set aside in a plate.

3#ย Melt remaining tablespoon butter in the same skillet. Add garlic, paprika, 1 teaspoon Italian seasoning, then add potatoes and sauteย for 2 to 3 minutes.
4#ย Stir in tomato andย chicken broth and simmer for 4 to 5 minutes.

5#ย Stir in and half and half, grated Parmesan cheese, spinach and crushed chili pepper flakes. Reduce heat to simmer for 2 to 3 minutes.

6#ย Return chicken to the skillet, skin side up, and simmer for 10-15ย minutes, until chicken and potatoes are cooked through. Adjust seasoning with salt and pepper. Serve immediately with additional red pepper flakes and parmesan, enjoy!

2 seedless English cucumbers;

1 small knob freshย turmeric, sliced;

1/8ย teaspoon crushedย red chile flakes;
1 teaspoon whole black peppercorns;
1 red onion (or shallot);
Shredded mint leaves (optional). Directions:

1# Cutย the cucumbers into very thin slicesย (using aย mandolineย works wonders for this job) and thinly slice the red onion as well.ย Lay cucumber and onion in the bottom of a mason jar,ย top with red chili pepper flakes, peppercorns, turmeric slices and mint leaves. Repeat the process with another layer of cucumbers and so on.

2#ย In a small saucepan, heat water, white vinegar, sugar and salt until simmering.ย Remove from heat and cool to room temperature.

3# Pour over the cucumbers, tossing lightly to coat. Cover tightly and refrigerate for at least 30 minutes and keep up to 1 week. Enjoy!

INGREDIENTS LIST FOR THE MOZZARELLA SPINACH STUFFED CHICKEN BREASTS:

2 boneless skinless chicken breasts, butterflied;
3ย tablespoonsย olive oil, divided;
2 slices of fresh mozzarella cheese;
2 cupsย fresh baby spinach;
4ย cloves garlic, minced;
1 small onion, minced;
1 can low-sodium crushed tomatoes;
1 tablespoon sugar;
1/2 teaspoon balsamic vinegar;
1/2 cup (125ml) chicken stock;
Crushed red pepper flakes, to taste (optional);
Salt and fresh cracked pepper.

Directions:

1# In a skillet, saute onion and 2 cloves minced garlic in a tablespoon olive oil for 3 โ€“ 4 minutes, until fragrant and translucent. Add tomato and chicken stock, bring to a boil and simmer over low-medium heat untilย theย sauce reduces and starts to thicken, about 15 โ€“ 20 minutes. Stir in sugar and balsamic, adjust seasoning with salt and pepper, then set aside in a large bowl.

2#ย In the mean time: In anotherย skillet or frying pan,ย add olive oil and garlic, sautรฉ over medium heat for 1-2 minutes. Add spinach and stir frequently until wilted and cooked, about 2-3 minutes. Set garlic and spinach aside.

3#ย Butterfly chicken breasts, slice lengthwise down the middle but not all the way through. Season chicken with salt and pepper on both sides.ย Place a slice of mozzarellaย ย over each chicken breast. Add Spinach and garlic on top. Fold chicken in half like a sandwich, keeping the stuffing in.ย Sprinkle top of chicken with red chili pepper flakes.

4# Heat a skillet over medium heat with a tablespoon olive oil. Sear and cook chicken on both sides for 5 minutes each, until golden and cooked through. Cheese should be melted and bubbly. Pour the tomato sauce around chicken toย reheat quickly until simmering. Serve immediately, enjoy!

Recipe note:ย You can cook spinach and chicken while the sauce is simmering, and assemble when chicken is done.
