Thai Quinoa Salad with Fresh Herbs and Lime Vinaigrette. NGREDIENTS

FOR THE SALAD

1 cup quinoa, rinsed (or pre-washed)
1/2 teaspoon salt
1 red bell pepper, cut into bite-sized strips
1 carrot, peeled and grated
1 English cucumber, seeded and diced
2 scallions, white and green parts, finely sliced
1/4 cup freshly chopped cilantro
2 tablespoons fresh chopped mint or basil (optional)
FOR THE DRESSING

1/4 cup freshly squeezed lime juice, from 3-4 limes
2-1/2 teaspoons Asian fish sauce
1-1/2 tablespoons vegetable oil
2 tablespoons sugar
1/4 teaspoon crushed red pepper flakes INSTRUCTIONS

Add quinoa, salt and 1-2/3 cups water to a medium saucepan. Bring to a boil and then reduce heat to low, cover, and cook for 15 minutes, until the water is absorbed and the quinoa is cooked. Transfer to a serving bowl and let cool in the refrigerator.
In the meantime, make the dressing by combining the lime juice, fish sauce, vegetable oil, sugar and crushed red pepper flakes in a medium bowl. Whisk until the sugar is dissolved.
Once the quinoa is cool, add the red bell peppers, carrots, cucumbers, scallions, fresh herbs and dressing. Toss well, then taste and adjust seasoning with more salt, sugar and lime juice if necessary. Chill in the refrigerator until ready to serve. I made this last night for dinner and it was amazing. The squash retained its slight crunch, the flavour was outstanding. This will be made over and over. ENJOY EVERYONE
SPAGHETTI SQUASH CHOW MEIN

SO GOOD, BETTER THAN THE REAL THING!!!! 1 large spaghetti squash
1/4 cup COCONUT AMINOS or Soya Sauce
3 cloves garlic, minced
1 tablespoon COCONUT SUGAR or brown sugar
2 teaspoons freshly grated ginger
1/4 teaspoon white pepper (or black pepper!)
2 tablespoons OLIVE OIL
1 onion, diced
3 stalks celery, sliced diagonally
2 cups cole slaw mix (shredded cabbage and carrots)
Instructions

Cut a spaghetti squash in half length wise and scoop out seeds. Lay skin side up in a 13 x 9 pyrex and pour 1/2 inch of water in the bottom of the pan. Bake at 400 degrees for 30-40 minutes, until flesh is very tender. Once done, scoop out flesh with a fork so it breaks apart into strings, set aside.
In a small bowl, whisk together coconut aminos, garlic, coconut sugar, ginger and white pepper; set aside.
Heat olive oil in a large skillet over medium high heat. Add onion and celery, and cook, stirring often, until tender, about 3-4 minutes. Stir in cabbage until heated through, about 1 minute.
Stir in spaghetti squash and sauce mixture until well combined, about 2 minutes.

Vegan Coconut Cream Pudding. All the goodness without the dairy. My daughters favorite dessert at the moment so when she asks mom makes it. ♥️♥️. Recipe with video can be found at @krissy_selfproclaimedfoodie Ingredients
1/3 cup sugar ( I use 1/4 cup )
2 egg yolks
1 14 ounce can lite coconut milk
2 tablespoons coconut cream
2 tablespoon flour
1 tablespoons cornstarch
Pinch of salt
1 teaspoon coconut rum, coconut flavoring or you can substitute with vanilla if desired
1/2 cup sweetened coconut flakes optional ( I use 3/4 cup and add 1/2 to the pudding and the rest for topping )

Instructions
Combine sugar and egg yolks in the bowl of a stand mixer. Use the whisk attachment to combine until light and fluffy, about 5 minutes on medium high speed, while stopping the mixer every coupld of minutes to scrape the bowl.
While eggs and sugar and mixing, combine coconut milk and coconut cream in saucepan. Heat on low just until the liquid starts to scald and you see steam. Remove pan from heat.
Add flour and cornstarch to egg mixture and whisk until well combined, stopping the mixer and scraping as needed.
With the mixer running on low speed, add a small amount of the hot coconut milk to the egg mixture and combine well to temper the egg. Once it is well mixed, add a little more milk, mix, and repeat until all of the milk has been added. Transfer the entire mixture from the bowl back to the pot and heat on medium low heat, whisking frequently, until thickened, about 5-10 minutes. Stir in coconut rum.
To toast your coconut, add it to a large pan and cook over low heat, stirring frequently, until golden brown. Once the coconut starts to brown, stir more frequently to avoid burning.
Serve pudding warm or cold. You can either mix the toasted coconut in with the pudding or you can serve it on top. Elderberry syrup, if you have a cold or flu this helps relieve congestion and reduce mucus membranes in the nose. It’s also an immune boosting powerhouse. Elderberries are rich in flavonoids and antioxidants. Recipe: 3/4 cup dried or 1 cup fresh elderberries, 3 cups water, 1 cinnamon stick or 1 tsp powdered cinnamon, 1/2 tsp whole cloves, 2 tbsp fresh ginger, 1 cup raw honey. Bring all ingredients EXCEPT honey to a boil, reduce temperature and simmer for 45 minutes. Remove from heat and mash berries, pour through cheesecloth or strainer. Allow syrup to cool to lukewarm and add the raw honey. Pour into mason jar and place in fridge. Will last 3 weeks Standard dose is 1/2 to 1 tsp for children and 1/2 tbsp to 1 tbsp for adults.
