Our sourdough starter doesn't look very active here because I just fed it but my tonight this baby will have grown to twice or more its size! Bread making commences on Friday! Continuing today's carbopalooza, I made lightened up fettuccine with Classico light asiago romano alfredo. 8 smart points for 1/4 cup of sauce and 2 oz noods. The rest, thank God 🙏, is free. Is it exactly like full fat kind? No. Still pretty tasty nonetheless and we press on.

Throwback to last week when I did a bunch of food prep! Yes, I do eat more than oatmeal, haha! Here are a few of my staples, old and new: Made an awesome bulgur and quinoa blend with veggies and black beans; 🥘 chopped up a bunch of veggies for snacks and other meals 🥗; plus my favorite: baked sweet potatoes and little creamer potatoes🍠🥔. I'm still working through this stash! Having some basics prepped certainly helps me during an extra busy week.
