I always have cauliflower rice in my freezer. It can be pretty expensive to buy it already riced for you (although really convenient!) but I usually just make it myself.
Chop up the cauliflower & put the florets into a food processor. Pulse it a few times until all of the cauliflower is the texture of rice. I decided to make tonight’s rice into a burrito bowl. 😍 🥑 Deets below ⬇️
I cooked the cauliflower rice in a skillet with smoked paprika, cumin, cayenne pepper & kosher salt. When the rice was almost done, I added in 1 can of black beans (rinsed & drained), & a small can of fire roasted tomatoes. Then I threw in chopped cilantro & the zest & juice of 1 lime. 👌
When the rice is done, add any toppings you want. I added salsa, lots of avocado, cilantro & of course more lime. 💚 Enjoy! #justforthewellofit
