Dinner tonight was Sour Cream and Pumpkin Crustless Quiche (4sp) with a roast chicken and rocket side salad (2sp). Easy quiche recipe from the WW Simply Delish cookbook. I find it a little bland so I sprinkle some Masterfoods Moroccan Spice on top and a drizzle of Praise Roasted Garlic Balsamic Vinegar. Yummy πŸ˜‹.

My first meal cooked from the new @weightwatchersuk kitchen collection "Chicken" cookbook. Teriyaki chicken 😍 This was absolutely amazing and very quick and simple to do. I made this for me and my husband so ran it through the recipe builder and it came in at (5sp) for the teriyaki chicken, served with white boiled rice (4sp) Asparagus (0sp) Really delicious .... Homemade muesli out of @weightwatchersuk #healthyyou recipe book 😍 200g Oats, 75g Sultanas, 50g Flaked almonds, 30g sunflower seeds, 25g golden linseed and 40g wheatgerm (which I cannot find ANYWHERE so I've made mine without!) With the full recipe it makes 10x servings at 6sp each but as mines missing the #wheatgerm mine will be 5sp a portion. Turkey Rice Frittata for Dinner. Recipe in the WW Weeknight 1 Pots cookbook. I choose to increase the mince to 500g (easier to buy), 1 1/2 cups of cooked rice and 9 eggs. Then put in the oven for 30min at 200. This made 8 big serves for 5sp rather than 8sp for a quarter (and I didn't have to watch the grill!). Paired perfectly with some rocket. Kids loved it. Will definitely cook again :) This cookbook is becoming my favourite!

I made a wonderful flank steak with red peppers/green beans (4sp) and a side of quinoa/rice blend (5sp). This was SO good. I ran out of soy sauce though, so I used TJ Soyaki instead. Also, they wanted $7 for 1 bunch of asparagus at the market...so I opted for 99Β’ green beans instead. I mean, if the asparagus tasted like a hot fudge cream puff...maybe worth the $$, but for asparagus...no thanks. Green beans were just as good! #foodswaps

Blueberry and Wholemeal Scones from the new WW Healthy & Homemade cookbook. The scone cutter I used was a bit big so it made 15 x 3sp scones instead of 20 x 2sp scones. Sweet but not overly so. Love when blueberries burst when still warm 😊
