1 cup coconut flour, sifted
1/4 cup psyllium powder
1/2 cup collagen powder
1/4 cup water
1/2 teaspoon salt
1 teaspoon baking powder (for paleo option, mix 1 part baking soda with 2 parts cream of tartar)
2 teaspoons apple cider vinegar
1/4 cup heaping melted grass-fed ghee or butter
1/2 teaspoon turmeric powder
Preheat the oven to 350F. Grease and line a 7 3/8″ x 3 5/8″ bread loaf tin.
Combine all the ingredients together in a food processor until evenly combined. The mixture will be quite thick as the coconut flour will absorb all the liquid. Don’t add more liquid, it will still bake well. (Note: because collagen proteins are delicate, blend them only on low to avoid damaging them.)
Scoop the mixture into the pre-lined tin and spread it out evenly. Use your hands to mold it or pat it down and smooth it out a bit more.
Place it in the oven for 35-40 minutes, or until golden brown and cooked through.
Remove it from the oven and allow it to cool.
