A discovery for me at yesterday’s Flavours of New Zealand tasting in London. 2015 vintage - medium bodied, dry Chard with delicious fruit flavours, balance, and structure. Minimum intervention and one assumes when the fruit is this good you don’t need to do a lot with it.

Does dry farming vines really important? Hell yeah it is! 🍇🌎🍷 Dry farming is the practice of NOT irrigating vines, which forces the roots to dig deep into the soil to find more nutrient rich water. Since this water is more scarce but more rich in nutrients, the vines are forced to focus most of their energy on ripening the bunches closer to the trunk, which in turn yields less bunches with more concentrated berries. As a result, the wines end up much more concentrated with pure and complex flavors, so if you see a biodynamic wine (which means the vines were dry farmed), you can expect a good quality wine!
