Ekşi maya yaparken organik un ve içme suyu kullanın
Temiz cam kap,tahta kaşık kullanın
Eğer herşey yolunda giderse 1-2 haftada ekşi mayanız hazır olur
Eğer ekşi mayanızın üzerine su birikmişse; bu ekşi mayanızın yerinin soğuk,aç olduğunun belirtisidir.
Hemen 100 gram mayanızı 50 ml su 50 gram un ile besleyin.Temiz kavanoza boşaltın.
Oda sıcaklığında ılık bir yerde 2-3 katı kabarıncaya kadar bekletin.Buzdolabına kaldırın.
Yeni başladığınız ekşi mayada 2 haftanın sonunda hiçbir aktivite baloncuk görmezseniz atıp yeniden başlayın.
Uzun bir aradan sonra ekmek yapmak isterseniz aldığınız 100 gram ekşi mayanızı 8 saat arayla 3 kez beslemeniz gerekiyor.
150 gram ana maya olarak ayırmayı unutmayın.
İlk ekmeğinizi ekşi mayanız 3 haftalık olduktan sonra yapınız.Önceleri bazlama yapmanız daha doğru olur..
Haftada 2-3 kez mayanızı besleyin.
Sık beslenen maya 3 katı kabarıyor.
Yeterince beslenmeyen ancak 2 katı kabarır.
Mayanızı buzluğa kaldırmak isterseniz tam 3 katı kabarıp aktif olduğu zaman buzluğa kaldırabilirsiniz.İsterseniz birazınıda kurutabilirsiniz.
Burada mayanın son 40 dakikasının hızlandırılmış hali.

Eğer arkadaşınızdan 50 gram ekşi maya aldıysanız;
50gr ekşi maya + 50gr un 40 gram su ilave edip karıştırın.Temiz kavanoza boşaltın,2-3 katı kabarınca 80 gram un 70 gram su ilave edip karıştırın.150 şer gram olarak 2 ayrı kavanoza boşaltın.
Birini ana maya olarak 2 saat sonra kapağını kapatın buzdolabına kaldırın.
Diğer kavanoz 5-8 saat için de 3 katı kabarınca hamur yoğurmak için hazırdır.
Her ekmek yapışınızda bu şekilde besleyin.Yarıyla ekmek yapın,yarısını maya olarak buzdolabına kaldırın.Haftada 2-3 kez besleyin.
Ana mayanız 150 gramı geçmesin,yeterli besleyemezsiniz.
Eğer arkadaşınız uzun zamandır mayayı beslemediyse,yarısını atıp aynı şekilde besleyinki maya güçlensin.

ダージリン紅茶酵母
はるゆたかブレンド

大好きな、中崎町ブーランジェS.KAGAWAさんのベーグル🍩
それをイメージして焼いてみました。

自分なりに考えたポイントはふたつ。
・胡桃は細かく刻んで練り込み、生地と良くなじませる
・甘さと塩気は心持ち強めにし、何も付けたり挟んだりしなくてもそのままでちょうどいいくらいにする

濃い焼き色を再現するため、ケトリングにはモラセスを使用。

こんな時間の焼き上がりなのでまだ食べてみてはないけど、
見た目はわりと近付けたような…
そんな気がする…

Finally I can drink a cup of ☕
Sourdough bagels for their breakfast and fig +nut and seed cookies (oil free and rsf) for his snack.
I used runny tahini instead of oil for cookies and it gave extra nuttiness. 😉
