Tonight I had the rare opportunity to take time on a weeknight and make a nice dinner for my son and me. I LOVE mushroom risotto! But I hate the fat and carbs that come with it. So I decided to makeover the recipe to a much more macro friendly version. It was so darn yummy! Full of the rich creamy slightly nutty earthy taste and texture of mushroom risotto that screams both comfort and decadence. I riced up some cauliflower and cooked it up with grass fed butter onions garlic sliced baby bellas and seasoned with thyme, S&P. Then let it all simmer in some almond milk and grated pecorino Romano.

•1/4 sliced cherry tomatoes •10 sugar snap peas •1 oz herb goat cheese & a splash of olive oil

Snack time 😊 My sweet tooth has gotten the better of me lately so I’m trying to have a healthier alternative. I eat a third of the crisps with half of the peanut butter to keep the calories and carb intake down but just enough to satisfy.
