This scrumptious brunch was the usual chocolate oatmeal topped with our homemade peanut butter and frozen strawberries πŸ‘…πŸ‘Œ

For the past few years I've been on this weird soapbox of declaring that I hate to exercise while also feeling sad about the way I look and feel - with which pregnancy didn't really help. And with Evelyn starting solids she's begun to watch what Ellison and I eat, which had me thinking more about what I eat. Well, this morning, I woke up extra early and as I was thinking about all this I decided three things:
1) I'm done being mopey about feeling unhealthy. I want to do something about it.
2) Lets be real, I still don't like to exercise. But my body needs it so I'm gonna start working out.
3) Enough thinking about it. We're going to clean out the junk that we eat at our home and start eating simple, healthy, and wholesome.

On the weekends we like we try cool, healthy recipes. πŸ˜‹ Protein waffles with jalapeΓ±os mixed in, sweet potatoes w/ spinach in a little olive oil, egg fried with olive oil, and avocado on the side. Yummmmay. ❀️ #WholesomeEating

#tacotuesday ft. my sisters cute little hand lol! Enjoyed these delicious lentil "meat" tacos topped with cashew sour cream, cilantro green sauce, tomatoes, fresh lettuce (from my garden), salsa, fresh cilantro, bell pepper, and of course guac on the side πŸ˜›πŸ’– Might post the recipe for the lentil meat & cashew sour cream later this week πŸ‘πŸΌ

First time trying the @wholesomecook take on the Papas baked ricotta cheesecake! The dough was the biggest challenge. Couldn't quite get the lid to seamlessly fit but I'm hoping it tastes delicious!

Oatmeal has a special place in my heart...mostly bc I eat it almost everyday for breakfast lol! You can never go wrong with a warm bowl of oats. I have been loving my recipe for oatmeal lately and it's super easy πŸ‘‡πŸΌ
β€’ 1 cup oats β€’ 2 cups almond milk
β€’ 1/2 mashed banana β€’ 1/2 tbsp molasses β€’ 1 tsp vanilla extract β€’ 1/2 tsp ground ginger β€’ 1/4 tsp nutmeg β€’ 1/2 tsp cinnamon β€’ 1 tbsp flax seed meal β€’ 1 tbsp ground maca powder
Combine all ingredients in a saucepan and cook until desired thickness! I topped mine with frozen & fresh berries, banana, coconut shreds, cocoa nibs, hemp seeds & of course a generous scoop of almond butter πŸ’–

Obsessed with dinner tonight. Went the extra mile and made my own curry powder for tonight if u didn't see my story! SOOO worth it! Enjoyed this large bowl (trust me I had more) of Curried cauliflower & crispy chickpea salad w/ coconut milk quinoa. Topped with a simple tahini dressing, black sesame seeds, green onions, avo, & lemon. Let me know if you would like this recipe bc it is definitely one u need to try!πŸ’–
